Sopapilla Cheesecake Pie

I only had regular vanilla extract, but I can't imagine it being possible for this darn thing to taste any more delicious!!! This dessert is going to wow the socks off my Bunko group at our Mexican potluck! Thanks for the recipe!

Baked Corn I

Reviewed: Aug. 9, 2009
This is wonderful! Since it's summertime I used fresh ears of corn. I used red pepper instead of green, and I stirred in about 3 T. shredded parmesan before pouring into the baking dish. MMMMMM!

Country Manor Breakfast Tart

Reviewed: Mar. 2, 2009
YUM! I used a store bought crust to save time. I substituted 1 cup condensed milk for the heavy cream, and 1 t. dried Herbes de Provence (always in my pantry) in place of the fresh basil and thyme, and replaced the monterey jack with emmental cheese (aged variety of swiss). Everyone at my mom's coffee morning wanted the recipe. Thanks for sharing; it's much better than the basic quiche recipe I usually make!

Big Soft Ginger Cookies

Reviewed: Feb. 9, 2009
Thank you, what a great recipe! These cookies are a divine combination between two of my hubby's favorite cookies; snickerdoodles and ginger snaps! I used butter instead of margarine, as that's what I keep on hand. I also used vanilla sugar for rolling the balls in. MMMM! For the size of my cookie dough scooper, 13 mins was perfect. The texture is addictingly chewy and slightly crisp around the edges. WOW!

Chicken Stew With Coconut Milk

Reviewed: Nov. 15, 2008
This is really tasty! We serve it over basmati, mmm! I brown the chicken in a saute pan and then throw everything in my slow cooker instead of the microwave. I double the potatoes, add 2 cloves of garlic, and substitute garbanzo beans for the limas.

Filipino Lumpia

These are wonderful! We are a military family and have been lucky enough to meet several Philipino friends over the years, and I must say these are as good or better than any others I've ever eaten. Great served with Jafran banana sauce!

Cinnamon-Roasted Almonds

These are very good. They are very similar to the ones we used to enjoy at German Christmas Markets. We like to add more cinnamon than the recipe calls for though.

This is one of our favorite family recipes, and I was not a wing eater until we found these. Everytime we take these somewhere we get lots of recipe requests!

Smashed Cauliflower

Reviewed: Oct. 16, 2008
YUM! I used less of the reduced chicken stock when smashing than called for, and used shredded co-jack as we didn't have white cheddar, but it was very cheesy and tasty and we will make this again. Thanks for the recipe!

Baked Ziti IV

Reviewed: Apr. 10, 2008
Thank you, this is very good! I used radiatore instead of ziti. I also combined the sour cream and ricotta (in place of cottage cheese) in a mixing bowl and tossed this with the noodles before layering in the pan with the tomato-meat sauce and cheeses. It gave it a creamy macaroni and cheese experience in between the layers of tomato sauce. YUM!

Really great chocolatey flavor and so easy to make! For a Christmas cookie exchange I am making the cut-outs into sandwich cookies filled with a peppermint icing. Thanks so much for the recipe!

Pecan Pumpkin Pie I

Reviewed: Nov. 25, 2006
This pie was too sweet for me and the flavor reminded me of a fruitcake rather than the buttery pecan taste I was hoping for. I had a problem with the pecan "struesel" as well, mine turned out more like a paste. I love the idea of the two pies combined together though, I'll keep searching for the one that fits my tastes more.

Chicken Makhani (Indian Butter Chicken)

Reviewed: Jan. 6, 2006
I have made this several times, and it's always wonderful! I've recently begun using a whole boiled chicken, shredded instead of pieces and doubling the sauce to serve over rice. Indian food is fabulous, but so many people don't try it because the ingredients can be mysterious. TRY IT, you'll love it!

Iowa Pork Steak

Reviewed: Nov. 14, 2004
Really great easy way to jazz up pork chops! I only used 1/2 pk onion soup mix though because sometimes it makes things too salty for us, and I only had cream of chicken soup and it still turned out great. My daughter who isn't a big pork chop lover, came back for seconds, thanks!
