I sauteed red onion until soft (instead of shallots because that's what I had on hand), added the corn and sauteed for another minute then added rice & water and cooked all together. The starch from the corn gave a creaminess to the rice when cooked together. A real comfort food, yum!

P.J.'s Fresh Corn Salad

This was really yummy; it's my new favorite salad! I only used 2 ears of corn and it seemed like plenty. Also, be sure and use an Italian dressing you really love; we used a roasted red pepper Italian and it was delicious!

Mrs. Sigg's Snickerdoodles

Just baked my first batch and having my first cookie now (still warm-OMG)! I used 1/2 whole wheat flour and 1/2 regular flour, and 1 cup butter because I didn't have shortening; they turned out perfectly. I followed others' suggestions and increased the rolling sugar to 4 T and cinnamon to 1 T (we LOVE cinnamon). YUM, thank you!

Clone of a Cinnabon

Amazingly yummy; THANK YOU!! We cut the recipe in half and it fit perfectly in our bread machine, and made 8 perfect cinnamon rolls. I followed another reviewers suggestion of making a paste out of the cinnamon, brown sugar and butter and spreading that onto the dough, and will do it that way from now on.

Artichoke Chicken

This was so easy and tasty; thank you Amanda! I followed other's suggestion and used 1/2 sour cream & 1/2 mayo ( low-fat worked just fine for me). I also used 2 cloves of fresh garlic instead of powder because I prefer the taste. I tried this recipe for my daughter because she is a huge fan of hot artichoke dip; she LOVED this dish :)

Cheese Garlic Biscuits II

I followed the recipe exactly but mine came out as flat as pancakes. They were tasty, but my family laughed at me when they saw them, haha... I baked them on a silpat instead of a ungreased baking sheet, so that's the only thing I did differently but I can't imagine that was the problem.

Cha Cha's White Chicken Chili

YUM! I made a few changes because I wasn't looking for all the heat: I left out the jalapenos, and I used 1 t. of smoked paprika in place of cayenne. I also only used 1 t. of cumin (daughter doesn't love it). In place of chicken breast(hubby prefers dark meat), I diced 1 lb of chicken thighs and browned them with the onions before adding the remaining ingredients. Thank you!

Simple, Classic Chicken Potpie

Hubby is not a pot pie fan, but said this was the best he had ever eaten. I baked my own chicken the day before, and in place of frozen veggies I used one large can of Homestyle Veg-All (large cut veggie mix) and it worked perfectly. I rolled the two pie crusts together to form a rectangle and baked this in a 11 X 15 baking dish instead of 2-9 inch pie pans. It would make a great potluck dish. I might cut back on the thyme a bit next time or maybe add some poultry seasoning; but overall this was a great recipe. Thank you for sharing!

Sopapilla Cheesecake Pie

I only had regular vanilla extract, but I can't imagine it being possible for this darn thing to taste any more delicious!!! This dessert is going to wow the socks off my Bunko group at our Mexican potluck! Thanks for the recipe!

Baked Corn I

This is wonderful! Since it's summertime I used fresh ears of corn. I used red pepper instead of green, and I stirred in about 3 T. shredded parmesan before pouring into the baking dish. MMMMMM!

Country Manor Breakfast Tart

YUM! I used a store bought crust to save time. I substituted 1 cup condensed milk for the heavy cream, and 1 t. dried Herbes de Provence (always in my pantry) in place of the fresh basil and thyme, and replaced the monterey jack with emmental cheese (aged variety of swiss). Everyone at my mom's coffee morning wanted the recipe. Thanks for sharing; it's much better than the basic quiche recipe I usually make!

Big Soft Ginger Cookies

Thank you, what a great recipe! These cookies are a divine combination between two of my hubby's favorite cookies; snickerdoodles and ginger snaps! I used butter instead of margarine, as that's what I keep on hand. I also used vanilla sugar for rolling the balls in. MMMM! For the size of my cookie dough scooper, 13 mins was perfect. The texture is addictingly chewy and slightly crisp around the edges. WOW!

Chicken Stew With Coconut Milk

This is really tasty! We serve it over basmati, mmm! I brown the chicken in a saute pan and then throw everything in my slow cooker instead of the microwave. I double the potatoes, add 2 cloves of garlic, and substitute garbanzo beans for the limas.

Filipino Lumpia

These are wonderful! We are a military family and have been lucky enough to meet several Philipino friends over the years, and I must say these are as good or better than any others I've ever eaten. Great served with Jafran banana sauce!

Cinnamon-Roasted Almonds

These are very good. They are very similar to the ones we used to enjoy at German Christmas Markets. We like to add more cinnamon than the recipe calls for though.
