About this Cook
I am a high school/middle school social studies teacher and I love my job. I enjoy cooking and baking as a way to help me relax. I hate cooking box mixes for anything from rice to cakes and I hate using canned ingredients like condensed soups. I like everything to be as fresh and unprocessed as possible! I have even started making my dog a homemade diet! My first child is due in November...we'll see how well I keep to that pledge once I have a newborn in the house!
My favorite things to cook
I like baking the best: cheesecakes, cookies, cakes and muffins. I also love cooking homemade spaghetti and enchilada sauce.
My favorite family cooking traditions
We also cook way too much food! It makes me smile and laugh when we show up for a family gathering because I have never seen us eat even half of the food!
My cooking triumphs
A cheesecake my lactose intolerant brother-in-law has named the "killer" cheesecake. It's so good he eats it even though he knows he is going to pay!
My cooking tragedies
Nothing major at all! Too much salt in bread once. Forgot the baking powder once.

Guinness(R) Corned Beef
I now always do my corned beef this way! Easy and tasty. My only complaint is that the veggies don't get a flavorfull as they do when I use the pressure cooker.

Hermits I
Just what I was looking for! Made the bar version and it filled my huge cookie sheet. Only change I made was substituting 1/2 c brown sugar for a 1/2 c of sugar. Omitted walnits. Smelled great while cooking and tasted great!

Chocolate Chip Muffins
Wow! An incredibly bland muffin...not even the chocolate could save them. Needs something more. I'm thinking brown sugar and a TON of vanilla. Not worth making again.
