This is so delicious! I'm not usually a fan of soup but the entire family is and I'm so glad I tried this! Like others I fry 8oz of bacon then saute celery and onions in the fat before I add the potatoes. I also add rosemary, thyme and lots of salt and pepper as well as garlic to the potato mixture. Since we eat is so quickly around here I double the batch and add a couple extra cups of water to thin it out; mine always seemed very thick and this works. Tonight's batch got 2 cups of diced ham from the leftover Christmas ham. This is a weekly dish around here!

Very good! I don't use canned soup so I made it with my baisc go to condensed "cream of" mix, added mushrooms to the soup and the sausage mixture. I used ground chicken and added sausage spices so it wasn't greasy at all (I acutally had to add oil to saute the onions). Perfect for a cool winter night. Definitely will be a staple recipe in my kitchen!

Wow! As a rule I do not like roast. I don't like mushy, stringy meat but that is not how this turned out at all. I have several cuts of beef from buying 1/8 of a cow and was saving the roasts until last, as this is the worst part as far as I'm concerned. But this recipe was not only easy, it was good! I followed the recipe exactly and it was a hit at dinner.
