About this Cook
I'm a city girl who was transferred when my husband decided to "go home", to the country. I've learned a lot about cooking from the country ladies over the 30 plus years I've been here. Raising my family here has been a delightful experience. Cooking is one of my favorite things to do, so I've gained much experience and improved. Now it's just the two of us, but I still love to cook for company.

Tomato Spinach and Basil Soup
I really liked this soup, except it was a little too thick. Adding a cup of chicken broth took care of that. The fresh basil is of major importance, as is fresh spinach. Next time, I will use only half the sugar and I'll add some grated Swiss cheese, as one of my favorite restaurants does. My hubby needed to add some hot pepper flakes. I'm making this for company next week.

White Chili with Chicken
We thought this was fabulous! A great change from heavy, traditional chili. I added some fresh cilantro and next time, I won't rinse the beans, as another reviewer suggested. `Can't wait to make it again.

Orange Pecan French Toast
This was way too sweet, but the texture was right on. I used day old Italian bread and followed the recipe exactly. I'll make it again, but I'll leave out the white sugar and the powdered sugar and I'll cut the brown sugar and corn syrup by half. The orange flavor is great.
