Slow Cooker Taco Soup
WOW, this is one of the best soups I've eaten! I made very little changes to the recipe, but did do the following; substituted a 14 oz. can of chicken broth for the water, used two 10oz cans of rotel for the diced tomatoes, added some diced jalepeno (I like it spicy) and as many suggested, added a package of Hidden Valley Ranch dressing mix. It was so simple, after browning the meat it all went in the crockpot and 8 hours later we had a great meal. I garnished each with cheddar cheese, some sour cream and tortilla strips and it made it that much better. Can't wait to make it again!

Tortilla Rollups IV
These were absolutely outstanding. I made them for a tailgating party and they were completely gone before the game even started. I was unable to find the fiesta dip mix that the recipe calls for so I just used taco seasoning and it was just fine. In addition I like things a bit on the spicy side so I used HOT salsa and it gave the rollups a lot of kick. Finally I think even more flavor was added by using the jalapeno cheddar tortillas. As many have mentioned, make sure you refrigerate these overnight so that they are easy to cut the next day. I left mine in for 12 hours and using a sharp knife I had no problems and they didn't become disfigured when sliced. I'm already planning to make these again for a work party tomorrow.

Taco Salad with Ranch Dressing
Absolutely outstanding!! I agree with the other reviews in that I didn't use the entire bottle of ranch dressing (about 3/4 of it) and it had plenty to coat the ingredients. I also seasoned my chicken with cajun seasoning for a little added flavor. In addition I used hot salsa and if you like it spicy, this definitely makes it that way. Since I don't like olives, I added in some corn and black beans and those were both great additions.
