Minestrone Soup I

This was delicious! When I checked it after an hour of simmering, I decided to add 2 c. water and 1 more cup of chicken broth. I then added the noodles and cooked for 20 minutes.

Blueberry Pumpkin Muffins

These were awesome! I live in Denver, so I adjusted for altitude by decreasing the baking powder to 1 1/2 teaspoons, increasing the flour by 1/4 cup, and increasing the milk by 2 tablespoons. I made 10 muffins and baked them in a 325 convection oven for 30-35 minutes. Thanks for the great recipe!

This was AWESOME! I halved the recipe and baked them in a water bath. It took way longer than 30 min. to get them to a Jell-O state, but it was worth it!

Brick-Oven Pizza (Brooklyn Style)

This recipe blows every other pizza dough recipe I've ever used out of the water! It felt like I was eating pizza from a restaurant right at home! The crust was super crispy and the toppings were a perfect match! Thanks for my new favorite recipe!

Bacon for the Family or a Crowd

This is way more convenient, but it took about 45 min. to get it crispy. I had to overlap the bacon on the pan to get it to fit and that made it all stick together. :( Next time, I think I'll split it up between two pans.

Chocolate Banana Cream Pie

This turned out fabulous and it was so easy to make! My husband says it's even better than regular banana cream pie... that's HUGE! I used a graham cracker crust, but next time I'm going to make a Ritz cracker crust. I made this a day ahead so I dipped all of my banana slices into lemon juice and then put them on a paper towel to drain. They still looked great today and didn't have any lemon flavor. I topped the pie with shaved chocolate swirls - so pretty! Can't wait to make this one again!

Luscious Four-Layer PHILLY Pumpkin Cake

I screwed this recipe up in several places and it still turned out great! I ended up making the yellow cake mix according to the directions (high altitude) on the box and added an entire can of pumpkin to the batter. I baked it in a bundt pan, and it came out perfect. I made the frosting without the pumpkin since I had accidentally used it all in the cake mix - still tasted great. I only made two layers of frosting - one in the middle and one on the top. I poured carmel sauce over the frosting and then topped with chopped pecans. It looked and tasted fabulous! My guests were even taking pictures of it!

This recipe was pretty good... not a favorite, but I'd make it again. I used a pound of ground chicken breast and that was way easier than using chicken breasts and cutting them up.

Oatmeal Peanut Butter Cookies III

These were a huge hit! I doubled the cookie dough, but made the creme as stated in the recipe. It worked out perfectly! I might try to make smaller, more bite-sized cookies next time because these are really filling.

Creamy Caramel Flan

I've never had flan before, so I don't have much to compare it with. I liked it, but our guests didn't seem very excited about it. :( I had a really hard time getting it out of the dish, so I put it over a pot of boiling water to loosen it up. After a couple of tries, it finally popped out. The middle of it caved in a bit.

Cream Peas

I thought these were awesome! Even my husband who hates peas tried them and thought they were alright. The only change I made to the recipe was that I used skim milk instead of heavy cream. They still turned out great and I saved a few calories!

Ciabatta Bread

I followed the instructions exactly and both loaves turned out great! I also sprayed the tops with water every 3 minutes and then brushed the tops with EVOO when there was about 5 minutes left. I will certainly be making this again. Thanks for the great recipe!
