Soft Sugar Cookies IV

Just what I was looking for. The cookies aren't too sweet so can handle a bit of frosting or sugar. Easy to think of add ins like lemon or orange zest or extracts like almond lemon or rum. Don't leave out the shortening part of why it's soft. I used a cookie scoop to drop on pans easier than rolling into balls. They are done when edges are slightly brown. Be sure to cream butter and sugar well and use fresh baking powder!

Peanut Butter Bars I

Really good follow the tips in other review and let base chill for about 15 min. before topping w/chocolate and then chill again for about 20 min. and cut. Chill after that for the remainder. The ratios are good and I would say if you add too much graham cracker or peanut buttter there won't be enough moisture and they will be crumbly. So measure.

Applesauce-Oat Muffins

Just so so - ok if you are looking for low fat but would be much better if you used 1/2 cup oil and 1/2 cup applesauce. I'd up the brown sugar too in the muffin batter to 3/4 cup. Definitely use more than 1/8 tsp. cinnamon. I'd add some vanilla too. I think instead of milk plain yogurt or buttermilk would be better.Chopped up apples would be a good addition. 20 minutes was ample time to bake.

Pink Icing Cookies

Pretty good but a bit bland but kids love them. Add some almond or lemon flavoring/zest for some zip. I found it best to use a small ice cream/cookie scoop and leave it alone. They do spread quite a bit so leave ample room on your cookie sheet.

Baked Chicken on the Grill

Good - probably could use a bit of onion and garlic powder. would also season the chicken before dredging in addition to seasoned flour. Didn't grill just did in oven at 425 for about 30 minutes.

Banana Cake VI

Really yummy and yes the cooking directions are correct. If you don't have room in your freeze get a cooler and put frozen stuff in temporarily to make room. It does make a difference and I do believe many cake recipes can be made with this technique. I used VERY ripe bananas - almost to the point of over ripe. I do that with regular banana bread and I find it makes much better, sweeter more flavorful bread or in this case cake.

Zucchini Cake III

Wonderful as is. No changes needed. Made in 13 X 9. I did use the reserved pineapple juice instead of milk for the glaze but that is the only thing I did differently. Milk would work fine too. Couple things to note though. The batter is stiff at first but once you add the drained fruit and zucchini it thins so I would still drain the pineapple. Also, important to whip the eggs and sugar until light in color as directed. Makes a big difference in the resulting texture.

Good and easy. I didn't even have everything like fresh cilantro and fresh ginger/garlic and it still turned out. It does need some crunch though so ramen noodles might be a good addition.

Creamy Vanilla Pudding

Basic and really simple. Didn't change a thing followed the directions exactly. Used over sliced bananas, graham cracker crust and topped w/real whipped cream. Important to follow the directions exactly and use whole milk. Not 2 percent or less. My experience puddings just don't turn out as well if you use low fat stuff.

Hearty Chicken and Noodle Casserole

This is a good base recipe that you can add a bit too to suit your tastes. Rethink if you don't much care for things made with oh the horror cans of soup, etc. Not for you. But if you are like most common yet good folk you will appreciate the guilty pleasure of it all. Used pennne pasta and healthy request cream of mushroom soup since I don't want my toddler eating msg - then added poultry seasoning, a bit more ground pepper garlic and onion. Also topped witht saltine and a drizzle of olive oil. Good stuff.

Triple five star. Will try to upload a photo but these popovers looked like they were on steroids! Haven'tt read the other reviews but I imagine maybe the extra egg helps? Yes they are a bit "eggier" than usual but not enough to make them taste bad. Really quite good and the extra butter sure helps with the flavor. Don't skip it. Live a little.

Chewy Coconut Bars

Does need double the salt and vanilla. But good overall. If too sweet for you try using unsweetened coconut (try the health food section of your grocery store - my Fred Meyer (Kroger) sells it in bulk and in the Bob's Red Mill section.) Much less sweet and just keep the sugar the same. I too used butter flavored crisco. Won't be chewy if you use just plain butter. Toasting the nuts and coconut really helps the flavor too.

Brooke's Best Bombshell Brownies

Not quite as easy as the box but pretty close and ten times better. Halved it and made in a 9x9 glass pan so baked at 325 for about 40 minutes. I don't think using a toothpick to test for doneness is the best way with brownies - looking for them to crack a bit on top and to not jiggle in the middle has always worked for me. Great!

Easy Mexican Casserole

This is good and easy and pretty adaptable to what you have on hand. For those that thought the 3 cups of crushed tortilla chips was too much I think you measure them BEFORE you crush them.

Simple Whole Roasted Chicken

I think the method here is the key to how juicy this bird comes out. I have a convection roast option on my oven so I think that also helped make a juicy bird with a crisp skin. Generally convection cookingn means you reduce the heat by about 25 degrees but mine adjusts automatically. I also roasted breast side down and the last 15 minutes roasted breast up let sit for 15 minutes then ate. I also did a brine - a really important step I think in getting a juicy bird. I read the article about roasting chicken on allrecipes and it also said to let the bird soak for at the most 6 hours no more and no less than an hour - also let it air dry in your fridge for at least an hour or overnight.
