Middle Eastern Rice with Black Beans and Chickpeas

I didn't add any beans. Used 2.25 cups of broth. Added about 5 cups of baby spinach. Topped with crumbled feta. VERY VERY GOOD. THe spinach stretches the meal, and like other reviewers said, is like an herb. I didn't add turkey to the rice, but instead made a turkey meatloaf.

Caramelized Baked Chicken

This was excellent. I was so surprised how good this was, considering the simple ingredients. Two boneless skinless, 400, 30 minutes, basting every 10. Yes, make the larger sauce and boil it down. Served with chipotle mashed sweet potatoes and sauteed leeks.

Hawaiian Wedding Cake II

You must use a handmixer when beating the cheese and pudding together; you cannot just mix it in with a spoon. It looks like the back of my thighs otherwise if you just use a spoon. You can fold in the cool whip though.

Asian Chicken Salad

This is what you would get in a fine restaurant. The sesame oil is NOT optional, but the seeds are. I poured this over cabbage and let sit for an hour. I think cabbage may be better than lettuce--lettuce tends to get soggy fast.

Southern Pulled Pork

Good. I couldn't decide between this and the other crockpot pulled pork recipe on this site, so I did a hybrid of the two. Instead of water, I did one cup of root beer and one cup of beef broth (I had a small pork tenderloin, didn't need that much liquid). I just tossed everything into the pot. Very good recipe.

Mexican Lasagna

Very good. I sprayed the bottom with Pam. I also added a layer of refried beans. I used about 2.5 cups of cheese and it still wasn't ooey gooey as I would have liked. Also cooked for 10 minutes longer at 375.

Cheese-Garlic Biscuits

This is a good building block recipe. I was looking for a tasty biscuit recipe using Bisquick. Unfortunately, I had run out of cheese and had about 1 pat of butter left. So, scouring my cupboards, I found a packet of chicken flavor ramen seasoning. I added that packet to the biscuit mixture, baked as directed. When out of the oven, I put slivers of butter on top to melt (omitting the garlic powder). Really quite good. I did not miss the cheese at all. I will experiment with this recipe.

Flank Steak Pinwheels

Very very good. Next time I will marinate the meat for 48 hours. It's a great way to cook a cheaper cut of meat. I used gorgonzola, forgot the breadcrumbs. I didn't sautee the onions as others suggested, don't think it matters. Fiance kept saying 'this is sooo good!' I will make this again.

Perfect Sesame Chicken

I wouldn't say this tastes like the Chinese takeout, but it is pretty good. The batter alone rates 5 stars. The sauce makes it soggy. Next time I'll put the sauce over rice, not the chicken.

Moo Shu Pork

Very good, very authentic taste. I DID make some changes. 1. I put two boneless pork chops into the slow cooker with chicken broth, soy sauce, chunks of garlic and ginger. I coated the chops with BBQ sauce (similar taste to hoisin but so much cheaper--just get a cheap bottle, it does not matter). Cook on low for 6 hours. This makes the meat VERY TENDER and you get so much more out of it than just from frying. 2. I'm all for convenience, but you really don't need to pay the extra $$ for prepackaged coleslaw mix. Get 1 head of cabbage. Roughly chop 1/2 of it. Get a handful of baby carrots, roughly julienne them. It really does not take that much more time. 3. I sauteed the veggies along with some garlic and ginger in vegetable oil with a splash of sesame. When nearly cooked but still crunchy, I added hoisin sauce mixed with soy sauce (1 tbsp of hoisin, 1/4 cup of soy). Mix like a green salad to coat. Let that simmer for a while, then remove the pork from the slow cooker. Remove fat. Shred the meat with the fork. After you've warmed the tortillas put a teaspoon of hoisin sauce on the tortilla and then build the rest of the wrap. Delicious.

Roasted Garlic Cauliflower

Pretty good. I made this as I had to use up some cauliflower. I would not necessarily purchase cauliflower for the sole purpose of this recipe. But a good idea, to roast it with garlic.

Chewiest Brownies

Very very good. My changes: 9x9 pan, bake at 325 for about 35 minutes, 1.5 cups sugar, splash of milk. I also added a couple dashes of Jim Beam. Why the whiskey? Why not? Very subtle added flavoring. Take out of the oven while the center is still 'gloopy.'

Crispy Chicken Strips

Finally! I've been looking for THE recipe for crispy chicken strips. I didn't have potato flakes (never actually purchased these before) so I used Lay's Wavy Potato Chips (ranch flavor). I also fried the strips in about 2 inches of oil and added garlic powder, paprika to the dry mixture. Oh, and I used two beaten eggs. Wow. Just fabulous. I'm going to try different flavored potato chips next time. Experiment with this one -- it's a great foundation recipe.

Busy Day Chicken Rice Casserole

This is a good building block recipe. I would not make this again as is. It is bland, and I even used an entire packet of onion soup mix, paprika, some chipotle powder. I would make it again with a Mexican variation: add diced green chiles, season the chicken with taco seasoning, cover with shredded cheese and serve with a dollop of sour cream. Maybe even mix salsa in with the rice. Easy to make though -- customize it to your tastes and preferences and you won't be disappointed.

Glazed Meatloaf II

A good foundation recipe. I actually added an entire packet of onion soup mix and still found it kind of bland. I also added heaping sprinkles of Tabasco sauce--still a little 'meh.' Experiment with this one. Served with mashed potatoes and vinegared English cucumbers. Good comfort food, great leftovers.

BBQ Miso Chicken

Great recipe. Experiment with this one: I added several cloves of garlic, a chunk of ginger, whirred it in the food processor and added all the other ingredients. I diced my chicken into 1 -inch chunks as I planned on baking it. I think this would work with pork, also. I plan on trimming the fat off of a couple of boneless chops and tossing everything in the slow cooker.

Burrito Pie

You absolutely must taste the meat mixture while cooking it. It tasted pretty bland, so we added 2 envelopes of taco seasoning and prob.about a teaspoon of salt. I also toasted the tortillas in a dry skillet as suggested, and spread the beans on the tortillas instead of adding to the mixture. Oh, I also added several dashes of Tabasco, and chipotle dry seasoning. I also used diced tomatoes with jalapeno (Del Monte brand, I think). Excellent recipe--feel free to tweak it to make it your own. And yes, it did make a lot of food. I filled one 9x13 as well as a 9" pie plate.
