Bacon Quiche

I think this is basically "Impossible Quiche" from Bisquick, but I loved it and so did my family--in fact, next time, I'll need to make two of these to feed our family of 5! Good recipe to tweak, too.

Green Chile Stew with Pork

Like someone before me, I noticed this was lifted right from "The Frugal Gourmet", except this person didn't even mention to roast the chilis, which in my opinion helps to make the recipe! Very good, however (with the ROASTED chilis). I don't think there are any copyright laws on recipes, but the description could have at least been original!

Mini Pumpkin Whoopie Pies

EXCELLENT recipe for whoopie pies, except I did add 1/3 cup extra flour and next time, I'll double the filling recipe. The whoopie pies I grew up on in PA Dutch country have lots of filling, and I had to spread this kind of thin, and ran out of filling just before I ran out of cookies. Pumpkin cookie recipe would be great on its own, too.

Fruitcake for the Picky

This is only the third year I've made fruitcake, and this is the first time I've used this recipe. It's different than the one I've used the past 2 years; it's seems a little less heavy, for starters. I substituted apricots for the mango, golden raisins for the currents (couldn't find either of the those ingredients). I omitted the citron since I couldn't find it in the store, but I added the zest of one orange. I used spiced rum--it tastes better to me. Of course, I won't know for a couple months how this tastes, but it looked good coming out of the oven, smelled great, and the little bit I snuck off the top tasted pretty good! Give it awhile to blend flavors, YUM! Can't wait! Glad I doubled the recipe!

Marshmallow Fondant

Yes, this was a sticky mess to start with, but once I got kneading, it was easy! And super fun! The fondant had a beautiful, soft texture, not stiff like the stuff you can buy. I only rolled mine out (the next day) to cover the cake, but I'd like to make it again and shape some fun details out of it. It did taste pretty good too.

Homemade Peanut Butter Cups

These were pretty good. I liked the filling, but I'd try better chocolate the next time I make them. I put the mini liners right into my mini pan to stablize them, then followed the recipe exactly. Everyone liked them, though, and I didn't think they were very complicated to make, so I will try them again!

Prego® Porcupine Meatballs

only okay--may have been better had I followed to a "T", but I chose to bake the meatballs first, since that's what I usually do when I make meatballs. They were a bit dry, although the sauce did help with that. Probably won't make again.

Refried Beans Without the Refry

Really good--even though I didn't follow exactly. I added a ham hock for the flavor, omitted the salt and the peppers. I'm sure as written it's also excellent--but what I loved the most was finally fixing beans in a crockpot successfully, and finding out that I don't have to always soak the beans! ****I'm changing my review to reflect the fact that I've since made this twice, following the recipe, and it's even better just as written! I also made it another time, using a mix of half pinto and half black beans, and that was good too. However, as written is the best of all!

Apple Spice Cake

Excellent cake recipe! I followed the suggestion of substituting 1/2 cup brown sugar, and omitted the raisins (kids hate 'em--too bad, Im sure they would have been great) I also grated the apples, since I wanted a more uniform appearance and baked in a 9X13 pan. Frost with cinnamon cream cheese frosting--MMMMM!

Sour Cream Apple Pie Deluxe

great recipe, I've been making sour cream apple for years, and used this version the last time I made it. I add walnuts to the topping, really good addition! The last time I made it, I gave out slices to the doctor and nurse I work for, and they both raved and raved! I'm making it again, at the doc's request, and writing down the recipe so he can make it at home.

Watermelon Pops

Cute idea, but not as easy as they sound. The chocolate chips simply dropped to the bottom (I don't have time and/or desire to babysit the pops to add the chips at "just the right time!") I think I used too large of paper cups, since I didn't get the thicker looking layers as in the photo, or as many pops as the recipe states. However, the kids did like them and they were all eaten up!

Hearty Breakfast Cookies

Yes, I changed this up a bit. But, they were delicious! And, in spite of my forgetting to add the water, they still came out perfectly, I don't think I'll add it the next time I make them. I followed the others advice--substituted 1/2 cup of honey for 1/2 of the brown sugar (this will also keep them a bit softer over the next couple of days) and I changed the raisins for chocolate chips, since only one of my three kids likes raisins. I didn't have wheat germ, so I just didn't worry about it. Plus, I like the idea of substituting some rice krispies for 1 cup of the oatmeal, so we did that. Yummy! My 4-year-old is polishing off hers right now, and I really enjoyed one with coffee. Oh, and I came up with 30 cookies, which is good for us since I don't like to have so many calories in one serving. (I think the original recipe assumes 2 cookies per serving, which may be fine for my tween boys who can consume many calories and still be thin as rails, but not for me or my hubby!) Try em, and don't be afraid to mix them up a bit!

Pat's Baked Beans

I can't believe I haven't rated this recipe yet! These are the best, I actually crave them, but only make them when company comes since my family isn't into beans. (I can't figure out why!) Don't change a thing, unless it's just a substitution for the beans, and use the best beans you can find (brands really are different, especially with the garbanzos--some cheaper brands have a really metallic taste to them). I'm making them tomorrow for Memorial Day and I'm going to try the crockpot.

White Mountain Frosting

Originally, I was just looking for a substitue for Seven Minute Frosting, and since I only have a stand mixer,this recipe seemed to fit the bill. I didn't read any of the reviews, or perhaps I wouldn't have tried it. And, initially, after the first taste from the bowl, I thought I'd made a mistake in making it. But now I'm not so sure... First of all, it's marshmallow frosting, to the T! It's sticky, gooey, and even my 4-year-old daughter thought it tasted just like marshmallow. I wasn't too happy with that, since I was going for a light, airy frosting (like seven minute!) Anyway, I had made it, it came out correctly, so I slathered it on the dark chocolate cake we had made. The recipe makes a TON, but you'll need it, because if you try to spread this too thin, you'll be picking up cake like mad. Turns out, this recipe on dark chocolate cake---tastes like heaven! I'm not sure what it reminds me of, something like Sno Balls, but fresher and no coconut (although coconut on it would be awesome!) You can tell I'm a child of the 70s! Next time, though, I'll make cupcakes (dark chocolate, of course). The cake really is quite hard to cut cleanly. I also don't know yet how this will store--or even where to store it. For now it'll stay on my counter. The only reason I gave it 4 stars instead of 5 is because I'm not sure how this will hold up over the next 24 hours. Teriyaki Sauce and Marinade

I don't think I've ever rated a recipe one star, and I hate to go against all the 5 star reviews, but I have to say I really didn't like this! I didn't want to look up my usual recipe, so I thought I'd try this one, given all the great reviews. I thought it was soooo salty, (and I use low-sodium soy sauce.) I kept adding sugar to try and cut the saltiness. I've managed to salvage it that way, but I probably added close to 1 cup of sugar, and I don't think my kids are going to like this (though we'll give it a shot) I looked up my recipe, which is from a Japanese cookbook, and it's basically equal amounts of soy/mirin/sake(or not, there are variations), along with about half the amount of sugar. So, 2:2:1, soy, mirin and sugar. I always add garlic and black pepper, and sometimes the vinegar, usually not though. I also don't usually add the oil (though my recipe does call for a tiny amount) Anyway, I guess our tastes are for a sweeter, stickier teriyaki sauce, and this recipe just wasn't it. Sorry!

Chocolate Scotcheroos

Okay, I wasn't sure whether to rate this a 4 or 5, but since everyone loves them, I'll go with 5 stars. I'll admit, I didn't think I'd like them, let alone anyone else, when I tasted the bits left over from making them (you know you do it too--licking the bowl!) I thought they'd be too rich. Then, I was distracted by my kids while melting the topping, so instead of one cup each, I use a WHOLE BAG of each, chocolate and butterscotch chips! After sitting in the fridge to firm up a bit, DH tried them first. Let's just say, they're a hit! I cut them into 1 inch squares (since they are rich), but the kids and I each had two, and DH, who cut his own first, had the equivalent of 6! The next time I try them, I might try just chocolate on top, or corn flakes instead of rice krispies. Oh, and the extra topping--worth it!!
