yum. I think I would add more horseradish next time, but only because I like a really nice burning sensation.

This is great and super easy. Eggplant, mayo, SEASONED breadcrumbs. If you're looking for something "special" you should probably look for something without "easy" in the title. If you are looking for a quick, easy and yummy way to cook eggplant, this is it. You can change in a myriad of ways by adding to the breadcrumbs or the mayo.
