Lemon Trout
Delicious. I was looking for a recipe for some trout fillets and this was just the ticket. Read the other reviews and decided to cut the flour from 4 cups down to 1 cup. I still had more than half of the flour mixture left over! I wonder if it's not supposed to be 1/4 cup rather than 4 cups. (???) I did not have the lemon zest on hand, so I omitted it and soaked the trout for a bit longer in the lemon juice. It tasted perfectly delicious, so don't be afraid to modify the flour mixture based on what you have on hand. I will definitely be making this again - it got big thumbs up from the family. Thanks for the great recipe.

Shrimp and Crab Bisque
This bisque was absolutely delicious. I did make some of the modifications suggested by others. My first suggestion is that if you are serving this soup to more than 2 people, double the recipe - it doesn't make much. I used only crab, since I had been looking for a recipe for crab bisque. I had 8 oz. of crab meat and made a double batch. It was more than enough crab. I added 1 clove crushed garlic to the melted butter and I used Sherry instead of wine (about 1/4 cup for the double batch). I also used some paprika as suggested by another reviewer. I used 2 tbsp and it was a bit much. Next time, I will cut it back to 1 tbsp, but I do like the paprika with this recipe. I ended up having to thin it out a bit with some chicken broth, since it became quite thick as it cooked. My husband and I both thought it was delicious! Thanks for a great recipe.

Grilled Cornish Game Hens
These grilled game hens were a wonderful diversion from our usual, more mundane (i.e. chicken) menu. I confess that I only had two hens for the 4 servings I was hoping for. Prior to marinading, I cut each of them in half lengthwise, so that each half had a wing and a drumstick. I placed the four halves in a glass baking dish and poured on the marinade. (I made 1/2 the marinade, since I had half the game hens!). My husband, who is the Grill Master, popped them on the grill and cooked them slowly as he would a large, bone-in chicken breast. It didn't take anywhere near the 1 hour called for in the recipe (probably cutting them in half cut down on the grill time.) These were delicious, juicy, and visually appealing. My whole family was impressed. Served with long grain rice and stir-fried snap peas. The 1/2 hen was just the right amount for each serving - no one was still hungry, but alas, there were no leftovers! I will most definitely be making this again when we are in the mood for "something out of the ordinary".
