Fudge

Reviewed: Dec. 23, 2009
This is a wonderful, easy recipe. The only thing I would change - I'd reduce the butter to two or three tablespoons because mine came out a little greasy. I also changed the ratios of chips - I used one cup milk, one cup white, and one cup dark chocolate chips. I also added a teaspoon of vanilla extract. I'm going to try making a cookies and cream version of this tonight. Thanks for the great recipe!

This is my new favorite way to make tilapia! I tried the dill sauce on salmon too, it's just as wonderful. A keeper, thanks for the great recipe!!!

Cheesecake Brownies

Reviewed: Oct. 30, 2009
I took these to work today for Halloween and they were a huge hit! I used food coloring to turn the cheesecake batter orange. I took the advice of other reviewers and reserved 1 cup of the brownie batter, and placed it on top of the cheesecake batter, pulling a knife through to swirl it. I'll definitely make these again (next time with walnuts). Thanks for the great recipe!

Marshmallow Fondant

Reviewed: Jun. 26, 2009
This was tasty, but please use a Kitehen Aid or Cuisinart Stand Mixer - my poor little handheld couldn't handle the dough - and it's HARD WORK mixing by hand. I'll use this again when I need fondant, but hopefully I'll have a better mixer next time. :)

Four Cheese Macaroni

Reviewed: Apr. 13, 2009
This is similar to my recipe for mac and cheese! I used extra sharp cheddar, mild cheddar, medium cheddar, and mozzarella. I doubled the amount of cheese, and I melted all cheese on top of the stove on low heat, mixing with the half and half, and I also used a small can of evaporated milk. After the cheese was melted and combined, I removed the pot from heat and whisked in the two eggs. I'll definitely be making this again. Thanks for the wonderful recipe!

Fried Plantains

Reviewed: Feb. 28, 2009
I used overly ripe plantains (they were black) and fried them in 1 TBSP of butter and 1/2 TBSP canola oil. Very sweet and addictive. Thanks for the great recipe!

This was okay. I felt like it was missing something (not sure what)? I might try it again and tinker with the recipe a bit.

Salmon with Lemon and Dill

White Chocolate Fudge Cake

Reviewed: Jan. 1, 2009
I took this cake to a NYE party and there weren't any CRUMBS left!!! Everyone raved over how good it was! I used a French Vanilla Cake mix (tasty) and increased the white chocolate in the cake mix and frosting to 4 oz each. I wanted a layer cake so I used 9" pans. When the cake was cooling, I applied the ganache/fudge mixture (to which I added 2 TBSP heavy cream) and then popped the layers in the freezer for about 20 minutes to make it easier to frost. I used another buttercream icing recipe instead of buying storebought icing. I'll definitely make this one again. thanks for the great recipe!

Red Velvet Cake I

Reviewed: Dec. 4, 2008
This was great! I did omit the vinegar since the recipe calls for buttermilk. I also added 3 tablespoons cocoa, and only used 1 ounce of red food coloring (I ran out). Thanks for the great recipe!

Creamy Cream Cheese Frosting

Reviewed: Dec. 4, 2008
I wanted white chocolate cream cheese frosting, so I added 4 oz melted white chocolate (cooled slightly) to the end result. I also used the entire block of cream cheese. I used this on red velvet cake. Thanks for the great recipe, I'll be using it again!

White Chili I

Reviewed: Oct. 30, 2008
This was a little more like soup than chili, but still tasty nonetheless. I reduced the chicken by half and added a can of red beans (wanted more protein and less meat. I guess that makes it red and white chili). I also used cheddar cheese on top instead of the Monterey Jack. Thanks for the great recipe, I'll definitely be making this again!

Stir-Fried Shrimp with Snow Peas and Ginger

This was really good! I added one teaspoon sesame oil to the soy sauce/cornstarch mixture, and added a few more vegetables, like celery, broccoli, and baby corn. I also increased the sauce as suggested by others. Lastly, I substituted splenda for the sugar (on a diet). Thanks for the recipe!

Fried Mozzarella Cheese Sticks

Reviewed: Mar. 4, 2008
These were pretty good, I made a few modifications. I added garlic powder to the breadcrumb mixture. I omitted the flour/cornstarch mixture and double dipped the sticks in the egg wash and the breadcrumbs, then froze them for about 15 minutes. After frying the cheesesticks, I popped them in a 400 degree oven for about 7 minutes, to make sure the cheese was melted. For an extra special treat, use fresh whole milk mozzarella.
