These were delicious! I loved the flavor. The only thing I would change is to add more milk to thin them out (they were very puffy and thick) and cut down on the baking powder/soda a little to make them less cakey .I served them with warm real maple syrup and some apple slices I baked with cinnamon and sugar. They were a hit! I'll definitely use it again!

Easy Chocolate Banana Cake

With a few modifications, they were delicious. I used 2 bananas, left out the cocoa and used 1.5 cups of semi-sweet chocolate chips instead. I also made them into cupcakes (baked for 18 mins) and frosted them with a butter, milk, vanilla and powdered sugar frosting. Yum!

Blueberry Buckle

Broccoli and Rice Stir Fry

It was pretty good, but needed more flavor. The soy sauce wasn't enough. I threw in some garlic, but I felt like it needed even more - maybe some onion, red peppers or something to give it more of a punch. I don't think I'd make it again.. I'd just make up my own or find another recipe.

Key Lime Pie I

This keylime was awesome. It was light and fluffy - just like I like them. I got raving compliments when I served it at Easter dinner. This one will definitely be made again in our house! The only change I made was the crust - I bought a pre-made pastry crust instead of the graham cracker crust. And I would bake the pie a little longer - it didn't set up quite as well as I would have liked.

Slow Cooker Chicken with Mushroom Wine Sauce

My Husband hates mushrooms, so I left them out, and then he loved it. As did my parents. I also used frozen chicken breasts and cooked it 8hrs. I think it could use some color though (since I left out the mushrooms). I will probably add some parsley or chives to it next time.

Raspberry Lemon Muffins

I loved this muffin. But I did make a ton of changes to it and they came out great! I'd make them again - for sure. The modifications were: 1c vanilla yogurt, 2 T oil, 3 t baking powder, 1 c sugar, 1/4 c milk, 3/4 c wheat flouer, 3/4 c white flour, 1 c fresh raspberries, 1/2 c fresh blueberries, brown sugar sprinkled on top.

Baked Apples

The flavor was great, but they definitely needed to cook longer. I'd say at least an hour or more. I like my apples to where they cut with a fork/spoon. I needed a knife for these. I'll make them again, and let them bake for about 85mins.

Aaahh! Potato Soup

This is definitely easy and yummy! It has a little different flavor than the traditional potato soup that I'm used to, but it's definitely just as good in it's own way. I made a double batch for a party and put it in my slow cooker for 4 hrs. It turned out great! Everyone loved it. I'll make this one again for sure. It's so easy!!!

Seven Layer Salad

I can make this salad and eat it for a day or two afterward - it's so yummy! I usually make it with fake bacon (morning star) and use green beans and broccoli instead of peas and cauliflower (my husband doesn't like peas and cauliflower). This is a hit with everyone I've served.

Enchilada Casserole

I used Boca crumbles instead of the tempeh, didn't use the jalapeno, added a bit of corn, chili powder, and cumin. I wasn't too impressed. It was okay and edible, but definitely not earth shattering. I think I'd rather use my own enchilada recipe (in my head) and just take the time to roll them. I won't be using this one again. It's kinda boring.

Pumpkin Fudge

Very good recipe. I boiled the fudge until 234 instead of the called-for 232 degrees. Then, I beat the mixture for about 20 mintues. Set up perfectly and was a HIT on Christmas Eve. I will make this one again next year!
