Easy Mushroom Rice
This was fantastic and an easy prep. Only thing I changed was to add fresh mushrooms rather than canned. Yummy!

Black-Eyed Pea Chowder
This is absolutely delicious. Similar to others, I used chicken broth instead of the beef consomme, two cans of Blackeye Peas and one can of spicy chipotle tomatoes.

Brunch Egg Bake
Very easy to make, tasty and versatile. Made for brunch and had plenty left-over for breakfast the next day. Great way to make use of random refrigerator ingredients (ie, sausage, bacon, ham, onions, etc.).
