This recipe is one I created recently that incorporates a wonderful variety of savory flavors that will leave your mouth watering for more!

My favorite family cooking traditions
Ingredients
1 2 1/4 pound package pork chops
1 pound roma tomatoes halved and quartered
1 pound button mushrooms sliced,stems trimmed
5 cloves garlic
2 tablespoons extra virgin olive oil
coarse salt and ground black pepper
1/4 teaspoon cumin
1/4 teaspoon coriander
1/4 teaspoon oregano
1/4 teaspoon marjoram
1/4 teaspoon thyme
1/4 teaspoon rosemary
1/4 teaspoon sage
1/4 teaspoon basil
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon paprika
1/4 teaspoon sugar
1/4 teaspoon crushed red pepper
( most big name stores sell the these last 13 ingredients already mixed in two containers usually found in the seasoning section of the store.one is called "soul seasoning" and the other is "italian seasoning")I prefer mixing it myself but this saves time.

Directions
1. preheat oven to 425 degrees F.In a 9-by-13-inch baking dish,combine tomatoes,mushrooms,garlic,and oil;season with salt and pepper.Toss with hands to evenly coat all, and move mixture to ides of pan.(leaving center free)
Mix last 13 ingredients together in a separate dish and add
2.1 teaspoon salt and 1/2 teaspoon pepper to those ingredients and sprinkle pork chops with this mixture,rubbing it in on both sides of the meat.Place pork in center of the pan containing the tomatoes,mushroom,and garlic you prepared before.
3.Roast in preheated oven until meat registers 160 degrees F on an instant read thermometer and mushrooms are tender,45 to 50 minutes.Remove from oven.
4. Serve pork immediatley and top with the tomatoes,garlic, and mushrooms as well as any pan juices.
