Buttercream Icing

Reviewed: Jun. 24, 2009
I wish I could do 4 1/2 stars because that's more fitting! I found that I only needed 3 cups of sugar. I also used a bit of Wilton's butter flavoring and gel food coloring. Fantastic!

Apple and Pumpkin Dessert

Reviewed: Apr. 30, 2009
Awesome? No. But still a pretty good way to satisfy your sweet tooth while being healthy and using up that leftover pumpkin from the holidays. I'll probably make it again and might add a tsp of brown sugar.

Lavender Tea Bread

Reviewed: Mar. 18, 2009
I'm giving this 4 stars because the batter is fantastic, but I think I prefer it without the lavender. I guess I'm just not a lavender person. I used 1 tbsp of dry, which I think is just a tad too much. It gets a bit of perfume taste to it. I should have added just a tad more flour because it was a bit crumbly.

Venison-Bacon White Chili

Reviewed: Feb. 8, 2009
I used the spices in this recipe as a guideline for my own venison chili. I didn't follow the ingredient list, but I felt I needed to comment anyway because it was fantastic. I cut the cinnamon and nutmeg in half but followed the remaining spices exactly. I'm definitely going to keep this recipe!

The Best Doggy Biscuits!

Reviewed: Jan. 31, 2009
This is an incredibly easy and inexpensive way to make dog treats. My pup, Lucy, has IBS so we have to be very careful about the ingredients we feed her. As you can imagine, it makes buying treats challenging. This is a great substitute for the organic pricey treats. Like others, I substituted low sodium chicken broth for the water, and I skipped the salt since the broth still had plenty of it.

Cinnamon Pancakes in a Jar

Reviewed: Dec. 26, 2008
I made these as gifts and never tried them myself so I can't attest for their flavor. The mix smelled delicious. I ended up mixing all the ingredients together. If you layer them, your recipient is forced to mix it all together themselves and refill the jar or make the entire batch at once. (Otherwise all the cinnamon will be on top.) I bought cinnamon maple syrup and apple cinnamon tea to compliment it in a gift basket.

Steakhouse Black Bread

Reviewed: Dec. 26, 2008
These are interesting rolls. I gave it 4 stars because I think it tastes like it suppose to (like black bread). I'm just not sure it's something that I'm fond of. My husband liked it quite a bit. I think my strong Southern coffee might have been a tad too strong because the flavor was a bit too distinguishable.

Butterscotch Bread Pudding

Reviewed: Dec. 26, 2008
I made two version of this for Christmas. One with butterscotch on homemade cinnamon swirl bread, one with chocolate chips on Swedish chocolate bread w/ black walnuts. I followed reviewers suggestions and decreased the amount of milk, but I wish I hadn't. It wasn't quite gooey enough, even with reducing baking time by 10 minutes. The butterscotch combination was awesome. The chocolate was a bit too sweet. I would suggest using less brown sugar when making the chocolate version or when using a sweeter bread. Next time I think I'll make a bourbon or rum glaze topping and some fresh whipped cream.

Christmas Morning Pie

Very good and very easy. I used turkey sausage instead of pork. I think this may become a Christmas tradition.

Honey Wheat Sandwich Rolls

Oh wow. These are great. I made them into smaller rolls (about 24/batch). This recipe is a keeper!

Lentil Soup II

Reviewed: Dec. 23, 2008
Disappointing but salvageable. I used the entire 8 oz can of tomato sauce and increased the Italian seasoning significantly. I also added a couple cloves of garlic, ground chicken, and a couple pinches of red pepper flake. I used my immersion blender to blend about half of the mixture, which thickened it nicely. It turned out pretty good, but it still seemed liked it was missing something. I love lentils, but I don't think this is the lentil soup recipe for me.

Bread Machine Rolls

Reviewed: Dec. 22, 2008
I've never made rolls using my bread machine before, and I'm wondering what took me so long. These were great! I subbed 1 cup of wheat bread because I just can't make white bread... I baked them for 20 min in 250 F b/c I'm freezing them. However, I finished one in the oven (a few min at 425) to test them. Since I was baking only one, I skipped the egg wash. They are a bit sweet but very good! Yum!

Sweet and Spicy Stir Fry with Chicken and Broccoli

Reviewed: Dec. 12, 2008
This is a good recipe, but it definitely needs tweaking with personal preferences. My husband and I LOVE hot food; however, I think a tablespoon of chile paste is a bit too much. I would suggest starting with a tsp and going up from there. For us, I think 2 tsp should do it. It's also a bit confusing to say 2 chicken breast halves since those vary in sizes. I used a pound of chicken breast. I also added diced carrot, baby bella mushrooms, and baby corn. It was delicious served over brown rice. I'll definitely make this again.

Coconut Curry Tofu

Reviewed: Dec. 9, 2008
I craved Thai food when I was pregnant, and now that I'm trying to lose the baby weight, it's on my no-no list...until I found this recipe! I used green peppers instead of yellow (cheaper) and added baby corn (b/c I like baby corn). My only mistake was making this on a weeknight. It took too long. However, I'm definitely going to make this again (on a weekend).

Mustard Crusted Tilapia

Reviewed: Dec. 8, 2008
I heeded the advice of the previous reviewers and made double the topping. With such low calories, why not? I thought I had spicy brown mustard in my fridge, but it was actually tangy dijon (such saucy names!). Never the less, it turned out great for a dish that was so quick and simple. This will be in my arsenal for quick dinners. (Especially since tilapia can be thawed in cool running water.)

Fantastic Black Bean Chili

Reviewed: Oct. 15, 2008
I used fire roasted tomatoes, but I think next time I'll use a can of Rotel. I also add some red pepper flakes for a little spice. It's a good recipe, but I think it needs a little tweaking.

Braised Balsamic Chicken

Reviewed: Oct. 13, 2008
Like other reviewers suggested, I added garlic to my onions. I also added chicken broth in addition to the full 1/2 cup of balsamic. This is a very good recipe, and it's pretty quick to pull together from typical pantry ingredients. I served it over bulgur wheat with a side of sauted brussel sprouts and a glass of wine. We'll be adding this to our mix.

Jo's Rosemary Bread

Mmmm! This is a fantastic recipe. A perfect compliment to spaghetti. I added extra Italian seasoning (it's a spice mixture that we love). I don't know who Jo is but she rocks!

Crusty Cornbread

Reviewed: Sep. 13, 2008
For some reason, my bread was a little soggy on the bottom. I agree with everyone that this is not cornbread. It's also not the typical bread that comes out of my bread machine. It's some kind of weird hybrid. If you keep in mind that it's suppose to have essence of cornbread, it's not bad. Otherwise it's a big disappointment. It takes more like hush puppy batter without all the good mix-in's. Next time I think I'll add more sugar. If there is a next time.

Honey Of An Oatmeal Bread

Reviewed: Sep. 10, 2008
This is dangerously delicious and easy. It has a potent smell and taste of honey. Very good! Next time I think I'll substitute some of the flour with wheat flour.
