Crispy Mashed Potato Pancake
Excellent, my whole family liked it. I followed the suggestions of previous reviewers and used the 1 c./1 egg ratio. I added 1/4 cup minced onion and 1 tsp Tastefully Simple's Garlic Garlic. Also I used a blender to combine everything. I served them with cinnamon applesauce and they were a big hit. NOTE: I have a small griddle and so could only fry four at a time, so the actual cook time was a little longer for me for the whole batch.

Spiced Pear Bread
Excellent recipe, easy to make. I used a blender to combine the first five ingredients. Also, I only had two cups of pears and sweetened applesauce on hand so I switched the amounts for the applesauce and sugar (1 cup applesauce, 1/4 cup sugar). I used brown sugar and added a tsp of vanilla. Yum!! Definite Bake Again!

Shrimp and Sugar Snap Peas
Quick and easy. I omitted the chili oil and my kids, husband, and MIL loved it. Used the leftovers in a frittata (with some extra garlic, herbs, and cheese and that went over very well, also.
