Zucchini Brownies

These are halfway between cake-like and fudge-like. When you are scraping the batter into the pan, you might be thinking "This can't be right," because it doesn't resemble a batter at all - it is very dry at that point. Even without an egg, they turned out FANtastic! The recipe halved well, made in an 8x8 pan, cooked for nearly 25 minutes. You can add 1/4-1/2 tsp. of cinnamon for a little extra something. The frosting is GREAT, but I softened the butter instead of melting it. And if you don't care for nuts, you can sub semi-sweet chips instead. Thanks for a great recipe!

Overnight Coffee Cake

Very good! Mine was baked-up within 30-35 minutes. If you desire a simple glaze, here's my personal favorite: 2 Tbl. softened butter, 1/2 tsp. vanilla, 3/4 cup 10X, and milk (to desired consistency). COOL CAKE SLIGHTLY before you spread the glaze on, or it melts too quickly.

Restaurant-Style Buffalo Chicken Wings

WOW! I use the bagged, frozen wings (thawed & drained well). The flour will coat up to 15-20 wings, actually. These bake up well using Reynolds Non-stick foil and baking according to the bag (mine says 375' for 35-45 min). Since I bake mine, I slather some sauce on part of the way through; flip the wings, then add remainder of sauce. These get RAVE reviews from DIE-HARD WING LOVERS!

Moroccan Salmon Cakes with Garlic Mayonnaise

The wonderful mix of ingredients lends great flavor to these cakes! They have so much flavor, I don't like to put the garlic mayonnaise on mine. I tend to have trouble with them sticking to the pan, even if I use more oil, so the next time I am going to try baking the mixture in a small loaf pan. Also, I use the entire eggs rather than just the yolks.

Sloppy Joes II

Very, very good! I usually don't have green pepper on-hand, so I add a bit more onion. And Dijon mustard works fine, too. I also have used ground turkey and/or ground chicken, with good results. With a recipe like this, there is no reason to buy the canned stuff.

Homemade Cereal

This is absolutely delicious. If I could give it more stars, I would! I always bump up the vanilla, cinnamon, & nutmeg a bit, and leave out the coconut. The last time I made it, I added bran flake cereal to it, and I am super-satisfied with the results. Here are the measurements I used: 3.5 cups oats, 3.5 cups bran flake cereal, .75 cup wheat germ, & .75 cup wheat bran.....everything else the same. Thanks for sharing this gem of a recipe, Cheryl!

Frozen Chocolate Pie

This is a great frozen pie that doesn't involve the thawing, spreading, & layering hassles of making typical ice cream pies. I served it in a chocolate graham shell, and it went as fast as the two other ice cream pies I made. Delicious!

Creamy Rice Pudding

Great flavor! I use brown rice, and I'm not sure if it contributes to the lack of creaminess I get each time. Since mine doesn't get as creamy as some reviewers describe, it doesn't chill too well. This is a great way to use leftover rice.

Chocolate Pudding Cake II

Quite easy to put together with basic pantry staples. When I'm out of eggs to make brownies or a regular cake, this is a satisfying chocolate dessert! It is best eaten the first day, and you must have patience to let it cool a while before eating or serving--one of the hardest parts for our household!

Triple Berry Crisp

This is my staple berry crisp recipe! Frozen berries work well for me (unthawed). I reduced the butter to 1 cup + 2Tbl.. We like more berries per crust ratio, so I double the berries. And par-baking the bottom crust for 7-8 minutes seems to work well. Great flavor!

Apple Crisp II

Whenever I make this, I get rave reviews! The topping is so good I multiply it by 1 & 1/2. Plus I halve all the sugars. I bump the cinnamon up to 1 Tbl., and add a bit of nutmeg as well. I often sneak wheat germ or bran into the topping, and nary a person has noticed yet. This is a winner, Diane!

Cinnamon Coffee Frosting

What a unique frosting flavor! Very good on chocolate cake. Save the step of mashing the instant coffee by dissolving it in a little water or the vanilla. Excellent!!
