Grilled Portobello and Mozzarella

Simple and good, but I'm not big on the italian dressing part, so I also made a simple marinade using olive oil, vinegar, and some spices. Also, dried herbs are similar in taste to sawdust, use fresh.

Bacon Chicken II

Wow, this was great and so simple I alost past it by. I didn't have honey bbq sauce so I just made it myself using honey and bullseye bold. I used chicken thigh, the dark meat goes well with the bbq sauce, and the extra cooking time makes sure the bacon cooks and bbq sauce caramalizes. I also chopped some onion into the sauce.

Amaretto Chicken

An excellent recipe, the flavours go together extremely well. I only recommend this for people who like strong flavours - all of the ingredients in this recipe are quite bold. I made a small roux first to thicken the sauce up, and if you actually cook it for 40 minutes nobody will like it because the chicken will be dried out - try 20 minutes, but better yet - learn your oven and how long it should take. Chop the capers too.

Maple Salmon

Excellent and simple, the way salmon should be. I used salmon filets and marinated for a couple of hours. This works just as well on the bbq. Whatever you do, don't overcook the salmon.

Mushroom Risotto

A good recipe overall. Use half the cream. The 5 cups of broth are more of a maximum amount you will need - use common sense and stop adding broth when the rice is cooked. I used chicken broth instead and added chicken.

Excellent recipe that is easy to modify according to taste. It's worth spicing up a bit, but otherwise good as is. Let it reduce and it will taste all the better.

Caramelized Baked Chicken

A pretty good and easy wing recipe. Boil the sauce down in a sauce pan to less then 1/2 first and then put it in the oven with the wings and the result will be closer to what was probably intended.

Salmon with Brown Sugar and Bourbon Glaze

Very fast, very easy, and very tasty, this is a fantastic recipe. I actually had no bourbon on hand, but the Canadian whisky which I did have worked perfectly.

Butternut Squash Soup

A quick and easy way to prepare this dish is to cut the squash in half, place each half face down on a plate, and microwave for about 8 to 10 minutes. Then just scoop out the prepared squash and puree with the rest of the ingredients. Half the cream cheese was plenty.
