Chipotle Honey Roasted Peanuts

Very Good. I combined everything in the recipe. Roasted at about 250 deg for about 2 hours than increased the temp to 350 for about 1 hour. Stirring every 15 minutes. Once done dumped in to a metal bowl and continued to stir every 5 to 10 minutes. till cool. This will give you a coating like toffee coated peanuts. Everyone loved them.

Best Lemonade Ever

Excellent recipe!!! I first washed and dryed the lemons, then bake them for an hour at 325 degree on a cookie sheet lined with a cooling rack turning once. I let them cool to room temp. Than ran them through an electric juicer rind and all. Than made the recipe to direction. Wonderful wonderful stuff. Everyone like it.

Chantal's New York Cheesecake

Excellent Recipe. I increased the recipe to 18 servings. Instead of using a 9 inch spring form pan I used a solid 10 inch by 3 inch deep cake pan. I lined the bottom of the pan with parchment paper befor puting in the crust. I followed the direction exactly for preparing the filling. Once I filled my cake pan I baked the cake at 300 deg for 3 hours in a water bath. Yes it may be a long baking time but with the size of the cake and thickness it is the best way to cook it. Once the cake was done I turned the oven off and left it in for the 6 hours. Once I removed it from the oven I put it in the fridge overnight and removed it from the pan in the morning and it came out perfect. The family loved it. I topped the cheese cake with the filling from the Strawberry Pie II. I will be using these recipes again.

Strawberry Pie II

I used this recipe to make a topping for Chantal's New York Cheesecake. I increased the filling to 18 servings. I took the advice of several other reviewers and made a puree of 1/3 of the strawberries and just quarted the rest. I also made a few changes of my own. I decreased the sugar but I also replaced the white sugar with 3/4 Cup packed brown sugar. I used 1 cup of amaretto liquor instead of water and used 1/4 cup cornstarch. The brown sugar & amaretto liquor was something I learned while working in a 5 star restaurant. The family loved it. I will be making this recipe again.

Corn Dumplings

I wanted something to go with my beef stew. Sence I was cooking my stew in the oven. I cranked my oven up to 400 deg. When I started to assemble the batter. I dropped the dumplings on top of the stew, put the cover back on and cooked it for 15 minutes. They came out perfect. I will be making them again. Thank You Pat for this recipe.

Sausage, Apples, and Noodles

The family liked it. Everyone said it was diffrent. I will be making it again. I used some amish egg noddles when I made it and I mixed every thing together rather than puting it in layers. EXCELLENT DISH.

Buffalo Chicken Dip

EXCELENT DIP!!! I made it to have while watching the race. Everyone loved it. I used 1LB of fresh chicken breast instead of canned. I slow cooked my chicken over low heat covered till I was able to shred it. Then I finished the recipe as written. Very easy will make it again. I was asked if it could be made with beef. I will let everyone know how it turnes out.

Gramma's Apple Bread Pudding

I made this for the first time last weekend for the family. My brother-in-law who has never bread pudding loved it right along with the whole family. I made 12 servings. I put it all in a 13x9 pan and baked it at 300 deg for about 90 minutes. It came out perfect.

Sweet Pickled Eggs

Sweet and Sour Sauce I

This is an excellent sauce for egg rolls. I have made a couple of times now. I use 2/3 cup sugar instead 3/4 cup and 1 1/2 tablespoon corn starch instead 2 tablespoon. Try this: Mix everything till the sugar is dissolved. Than pour in to a ice cube tray and freeze. After they are frozen place in a freezer bag. Place 1 or 2 frozen cubes in a microwave safe bowl and cook for about 90 seconds stirring every 30 seconds until thick.

Sweet and Sour Sauce II

I made sweet and sour pork using this recipe for my sauce. My Grandfather and I both loved it. The only thing I did different was. I used the juice from the pineapple. Than I added enought water to make 2 cups. In place of just water. Than I decreased the sugar to 1 1/4 cups. I will be making this sauce again.
