Roast Beef Stuffed Shells

Wow! I have been wanting to try these forever - but I just wasn't sure - the combo just didn't want to work in my head. Well, I made it last night and I am kicking myself for not doing them earlier. I did scale it down for 2 people. I used a roast beef I had made on the weekend, the gravy was from that as well. I had some frozen pre-cooked shells from another recipe and this made the dish ready to bake in under 10 minutes. I will definitely make this again and again. It was delicous - the combination of the horseradish and the gravy was so good! I couldn't realy taste the cheese and I am not sure if it is needed so when I do make it again I might leave it out. Oatmeal Pancakes II

These were really pretty good - I used half whole wheat flour and half regular white - the mixture was quite thin so I added another 1/4 cup of flour. I also used Splenda and did the milk with lemon juice trick for the buttermilk. I did add raspberries and blackberries and that really made them yummy. If ihadn't they would have been really boring. Still, will probably make again adding more vanilla and definitely the fruit.

Serbian Ground Beef, Veggie, and Potato Bake

Yeah, this just wasn't the thing for us. My husband put this firmly on the no thanks list. It was very bland and I doubled all the seasonings. I also added 2 more potatoes and it was still not enough. I actually liked it, but definitely not enough to make again. The only things I didn't do was use wine as I didn't have any (used beef broth instead) and left out the carrot. Cannot see how either of these would have made the recipe any more appealing. Sorry, not a fan.

Apple-Feta Tossed Salad

This was fantastic! I wanted to do something different ofr our salad with dinner. I had to use pecans instead of walnuts and used brown sugar instead of regular. I did cook the nuts in the toaster over and I left them a little too long, but they were still fabulous. I used romaine and the mixed greens (msclun mix). I did also add some red onion for just a little zing. The only thing I didn't do out of pure laziness was make the dressing. I taste tested with Raspberry Honey Vinaigrette and Lemon Poppyseed and the Lemon Poppyseed was the winner. Husband didn't have any - not his kind of salad, but that's fine I plan on eating every last bite. I had two servings if this instead of more of the main dish. Came together super easy (even easier if I pre-make the nights and store them) so I will definitely make this again! Thanks for sharing!

Lana's Sweet and Sour Meatballs

These are awesome, the first time I made the meatballs and the sauce using turkey and they were fabulous! The second time I used some pre-made japanese flavoured meatballs and the just the sauce and that was great too! I have premade and frozen the meatballs so all I have to do is come home to defrosted meatballs, make the sauce and drop them in.

Zucchini Brownies

Help Me!!!I'm alone in the house with these brownies. I made them at 8pm last night and have eaten a whole row! Spectacular! I used half splenda and half sugar. I had to use olive oil instead of vegetable oil but I don't imagine that made much of a difference. I also subbed pecans for walnuts. I only had about 11/2 cups icing sugar so the icing is just a tad bittersweet but it is fabulous! Forget zucchini bread! Great texture, flavour and the icing is perfect! I did not add an egg and I am glad I didn't!

Lemon Broccoli Pasta

Boring and bland, it didn't taste like anything. I added extra garlic and lemon and nothing. Kept the leftovers and will most likely throw some alfredo or something on it so as not to waste, won't bother with this again. Sorry.

B.L.T. Salad with Basil Mayo Dressing

Delicious! I made it to exact specifications the first time using pre-cooked bacon pieces and baking the croutons. I also used low-fat mayo. the 2nd time I used half low-fat mayo and 1/2 fat free sour cream and it was just as good. My husband also liked it which was a surprise! What a nice change for a salad and it really does taste like a BLT - the Basil is a lovely addition.

Warm Mushroom Salad

I loved this, probably used more mushrooms, just bought a package of pre-sliced cremini's and threw them in. I also added tomatoes. My husband liked it just as a side and I loved it for my salad. Planning on making again this week as muchrooms are on sale.

Spinach Enchiladas Verde

Fantastic! I used only 4 tortillas to make just for me. I mixed that sour cream and Salsa verde and used it on the bottom of the pan, in the tortillas and on top. Imight add mushrooms next time, but really this is perfect. I did have to put some salsa in a frying pan and saute the tortillas in that to soften them up, but other than that, super easy and amazing taste! will definitely make again. Maybe add chicken to tempt my hubby to eat them.

Alaska Salmon Bake with Pecan Crunch Coating

I hated salmon, never ate it, just couldn't do it, but for health reasons I needed to eat it. I asked for recipes to change my mind, got this one and now I am a convert. This recipe is awesome! I used panko crumbs instead of regular for extra crunch and I had to leave out the parsley. The pecans mixed with the glaze was heavenly. I had to resist eating it all and actually ate the leftovers the next day willingly. I think a really fresh piece of salmon is essential. It didn't taste fishy at all. I will definitely make this again and make my husband try it too!! Thanks AR exchange!

Chickpea Salad with Red Onion and Tomato

Pretty good, although I hate to say there is just a little too much garlic, which I never say. I had no parsley but added some dried basil. I will see how I feel tomorrow after it chills longer. Edited to add, that I ate one more time and haven't touched it since. What a waste of good ingredients.

Honey Roasted Red Potatoes

Delicious! I doubled the sauce recipe and used plain old mustard, I also added a dash of cayenne. I chunked up the onions and threw them in with the potatoes. I did have to up the temp. or the seasoing would have stayed watery. I am giving it a 4 only because my husband didn't like them. That's ok, more for me!

Crispy Rosemary Chicken and Fries

This was great. Super quick, easy and yummy. I only got to marinate this for about 25 minutes and it still had a ton of flavour. I used skinless, bone in chicken breasts and the meat was nice and moist. My potatoes got crispy but I find the trick is as after you cut them, rinse them with cold water and pat super dry and then coat. Gets rid of the starch on the outside. I scaled it for 2 but still used the same amount of seasonings, which made just a bit too herby, so next time I will scale back the herbs as well. Loved this!

Chicken Tetrazzini IV

Boring and after baking really dry. I ate it because I was hungry I don't think it needs the baking process and I couldn't really taste the sherry. I used 1% cream instead of full fat and added some chopped red pepper and mushrooms.

Pumpkin Ginger Cupcakes

These cupcakes were fabulous. I was looking for a new way to use up fresh pumpkin and these were it! I used Splenda and no-salt margarine instead of the sugar and butter and noticed no difference. I also used nutmeg instead of the all-spice and left out the crystallized ginger. I topped with canned cream cheese icing and that took these over the top. They were easy to make and baked up perfectly. Will definitely make them again.

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

Wow! This was perfect. I used super lean turkey and used hot salsa instead of the tomatoes. Other than the salsa everything else was according to recipe including the cornmeal and it was perfect. Now I can make this on my own to make it lower sodium and it was really quick too!! Will most definitely make this again. Thaks for the recipe.

Stir-Fried Vegetables

This was great. I left out the carrots and just chopped up a bunch of different peppers, added one zucchini, regular white onion and had to use frozen broccoli and cauliflower. I used sesame oil instead of regular oil. I didn't use the chicken broth sauce instead i added about a tablespoon of chili garlic sauce and it made enough sauce just with that combined with the soy. It also gave it a nice zip. Really ncie way to use up bits and pices of veg that might be going bad. I should have added my spinach that is almost going that would have been good too. A definite keeper.
