Lemon Cranberry Muffins

We like to do whole wheat flour at our house. To soften it up and reduce phytic acid, I soak the flour in the milk and 1 Tbsp lemon juice for an hour before mixing it all up. I also add 2 tsp baking soda to the batter to give it a bigger rise with the whole wheat flour. And I use sucanat in place of sugar. Only 1/2 cup or so for a double batch.

Barbecued Round Steak

Chocolate Mint Cookies I

These are so great! I didn't add any extract and I think they are minty enough as is. I melted my butter and sugar in the microwave for about 2 minutes then stirred in my chocolate chips. I used a melon baller to make sure all my balls stayed the same size...and I got 81 cookies. Totally delicious!!!

Spritz Cookies II

Good flavor, but I had a really hard time getting this recipe to work with my press. I add to add more butter because my dough was so dry. Then again it was a warm dry day here in CO so who knows? That's the frustrating thing about spritz cookies. I swear they only really work well about 75% of the time.

Chicken Pot Pie II

I love that the filling has no "cream of" something soup. I usually had more chicken and veggies and make 2 pies for my family. And I use whatever veggies I have on hand at the time. It's a big hit here. I poach my chicken breasts in a pot of water with onion and celery and garlic and pepper corns and bay leaves...whatever sounds good at the time. Then I strain that liquid and use it as my chicken broth later, too.

Cranberry Streusel Pie

I did add about half of a large fuji apple to this. I really loved the flavor and texture of the cranberry mix. I think next time I will add oats to the topping to make it more crunchy. But my kids, husband and I loved the flavor. Perfect for the holidays!

German Red Cabbage

Pumpkin Chocolate Chip Cookies I

Russian Cabbage Borscht

Loved this borscht! Used all organic produce from our CSA farm share. This was a great way to use our potatoes, beets, carrots and cabbage. I didn't have caraway so I substituted hungarian paprika. And I used 4 cups turkey stock for the initial cooking of the beets and potatoes. I left out the honey since my beets were already sweet, but I did add the vinegar because I like tang with my beets. Topped with sour cream...very yummy!

Vanilla - Chocolate Powdered Sugar Frosting

My 10 yo daughter picked out this recipe and it's a keeper! We didn't need very much frosting, so we used 1 c powdered sugar, 3/4 stick of butter, 2 T cocoa powder and 1 tsp vanilla, then added enough milk to make it creamy. Whipped it well with the kitchen aid. Yum! Very rich, not too sweet, very chocolaty.

Garlic Prime Rib

Used the techique listed here...but rubbed with a mixture of dijon mustard and minced garlic. I started the oven at 485 for 20 minutes. Then I lowered it to 325 while my sides cooked in there as well. I used my counter top meat thiermometer to gauge when it was done so I'm not sure of the time. Amazing flavor!!! Definitely a keeper!!!

Mexican Zucchini Cheese Soup

I added a pound of ground beef at the beginning. And I used 3 roasted green chiles from my freezer. This was really good. My 2 yo loved it, but the other kids weren't as sure. They don't like any cheese soups, though.

St. Patrick's Day Zucchini-Oatmeal Cookies

nice way to use up extra zucchini. I didn't have granola so I doubled the oatmeal. I also used some ww flour (because I ran out of white flour!) I used 1 cup of choc chips and 1 cup butterscotch chips for a double batch. Maybe they need some nuts?

Spiced Beef Stew

I double this for my brood and make a few changes. I use 3 lbs. of diced potates, 2 lbs. of diced carrots and 4 small parsnips also diced after the meat has cooked for an hour and a half. I then let the veggies cook for another hour and a half. I also use a full bottle of beer, 2 cups beef broth, and double the thyme. It's a keeper at my house!
