Creamy Cajun Shrimp Pasta

This recipe was a pretty good base recipe! I used 3 cloves of garlic and added some diced green peppers and 2 seeded & chopped roma tomatoes which added nice flavor and color. I added salt to taste and ended up using about 1 tsp of salt. I served this with garlic bread sticks & a salad.

Louisiana Shrimp Creole II

This was good! I substituted green onions for regular onion because that what I had on hand. The sauce thickened up nicely due to the cornstarch in the recipe. Great overall flavor with a nice "kick"! This is the perfect weeknight recipe - quick & easy. I served the shrimp creole over brown rice along with a green salad and crusty rolls to mop up the delicious sauce!

Slow Cooker Carnitas

Very good! I followed the recipe exactly! It smelled amazing as it was cooking all day! The meat fell apart and was super moist & delicious. I served the carnitas with tortilla's, onion, and chopped cilantro.

Lemon Horseradish New Potatoes

Delicious & robust! I used idaho russet potatoes that I had on hand - which I peeled and chopped. I added some fresh chopped parsley before serving. I was concerned that the horsradish would be too strong/spicy for the kids. That was not the case! The horseradish was mild and just added a good "kick"! I made these potatoes to accompany roasted chicken & baby carrots. It was the perfect addition!

Shrimp and Feta Cheese Pasta

This recipe was fantastic! I did make a few small changes. I added 1/2 cup of wine(chardonay) instead of the 1 tbs the recipe calls for. I also omitted the 3rd tbs of olive oil since I had plently of cooking liquid to cook the tomatoes & spices in. I only let the tomatoes simmer 5 mins before adding the shrimp back in & assembling the dish. This prevented the fresh tomatoes from breaking down too much & becoming a "sauce" instead of diced tomatoes. I seasoned to taste with salt and pepper. I also added a good handful of chopped Italian flat leaf parsley at the end which gave it a nice burst of color and freshness.

Spicy Garlic Lime Chicken

Awesome chicken recipe! A made a few minor modifactions - I cooked the chicken in 2 tbs of EVOO. I added 1 tbs of butter when I added the lime juice at the end. Chicken had just the right amount of heat from the cayenne pepper - just enough to add a little kick. Loved the tang from the lime juice! This recipe is a keeper! I'll be making again soon!

New Potatoes with Caper Sauce

These potatoes were absolutely delicious! A bit of a splurge considerating all the butter but worth it! I added a little more green onion than called for (1/4 cup). Other than that, we followed the recipe exactly. Will definintely make again!

Porcupines

This recipe is really good! I've made this a few times now & modified it a bit. Instead of browning the meatballs, I just place them in the pan with sauce to cover. I also add 1 tsp of celery salt & 1/2 tsp. of black pepper to the tomato sauce/water mixture. I like to serve the porcupines over rice or with baked potatoes with a nice green salad for a yummy, complete meal!

Fast and Easy Pancakes

Good, quick pancake recipe! I reduced the sugar to 1/2 cup. Also, I wisked everything together as oppossed to using the blender. Will make again!

Peanut Butter Cookies IV

These cookies are very good! I followed the recipe exactly. I baked the cookies for 10 mins. The cookies are very light and crisp yet moist and not overly peanut buttery. Will make again!

Cousin Cosmo's Greek Chicken

Good recipe! I used 3 boneless chicken breasts and cut each lengthwise for a total of 6 pieces. I did not have to pound them since they were thin enough after cutting. I added 1/4 cup white wine to the sauce for extra flavor. The sauce was delicious spooned over the chicken as well as the rice that I served on the side.

Good Old Fashioned Pancakes

Delicious pancakes! I followed the recipe with the exception of reducing the salt to 1/2 tsp. and adding 1 tsp. vanilla. This will be our pancake recipe from now on!

Italian Sausage Soup

Excellent soup! I used Italian Spicy sausage since we like our soup spicy! I used 2 cloves of garlic as opposed to 1, and added one small chopped onion while browning the sausage. I rinsed and drained the beans before adding them to the soup. I also used a whole bag of fresh baby spinach since it basically wilts down to nothing! Delicious!

Slow Cooker Barbecue Ribs

I wasn't too crazy about these ribs although my husband and 2 yr old son loved them! I followed the recipe exactly (except made 4 servings instead of 8. I didn't care for the flavor of the sauce. I'm not sure if it was the oregano, but to me the sauce had more of an Italian sauce taste than a BBQ sauce. The ribs were very tender though...fell right off the bone!

Toasted Garlic Bread

Very tasty garlic bread! The combination of butter and olive oil and along with the garlic,spices & cheese is very yummy! I served it along with linguini w/ clam sauce and it was the perfect addition. I will definitely be making this again!

Chicken Pot Pie IX

This recipe was SO good! The only thing I did different was I cooked the chicken separately the night before and cuded it up so it was ready to go. I also added a 1/2 teaspoon of poultry seasoning along with the s&p & celery seed.. My husband and 2 year old loved this recipe. I will definitely be making this again!

Bacon Wrapped Water Chestnuts III

Excellent! I've been looking for a good bacon wrapped water chestnut recipe and this is it! I did cut the sauce ingredients in half and it was still saucy enough. I plan on making this recipe a Christmas tradition in our home. However, this recipe is good year around!

Sesame Beef

I tbought the recipe was okay. I used round steak as called for, but the meat was a little too tough for my taste. I thought the marinade had great flavor. I might try this again using top sirlion as oppossed to round steak.

Downeast Maine Pumpkin Bread

This is the best pumpkin bread ever! The bread is so moist and the spice blend is so good. I wouldn't change a thing with this recipe. I baked a loaf for work and it was gobbled up in minutes!
