Taco Pies
My family loved it! I spiced up the meat with ground cumin, chili powder, onion, garlic, salt, and pepper. When I served it I added salsa as an additional optional topping. Next time I will double the refried beans. I made two with ground beef and two with Morning Star Farms Recipe crumbles. One of each went in the freezer for a later date when I'm short on time. My family says this is a definite do again!

Andrea's Pasta Fagioli
Good, but not as good as Nona use to make! Then again, nothing ever could be. I added a can of diced tomatoes at the end for color. Healthy, easy, frugal, vegetarian, and the family liked it.

Shepherd's Pie VI
My husband who says he does not like shepherd's pie, loved this! My four year old loved it too. I made two versions, one with meat and a vegetarian version. For the vegetarian version, I substituted Morning Star Farms recipe crumbles for ground beef and vegetable broth for beef broth. The only changes I made were adding some Roasted Garlic to the potatoes. I also made two batches of each version and froze one for later. The other I prepared and put in the refrigerator so all my husband had to do was put it in the oven while I was at work. The reheated leftovers were just as good too!
