Cherry Tomato Corn Salad

Served this salad with flank steak and avocado salad from this site. Very good, I was sceptical as I mixed the dressing in with the corn as it seemed a bit oily, but upon tasting discovered it was fine and yummy. All of the flavors mixed will to together. Used fresh line and added some zest, also add some chopped red onion. Very good!

Flank Steak with Avocado Salsa

This dish was amazing - I will be making again and again! First the salsa - I made in advance leaving out the avocados until right before serving. Left it on the counter for the flavors to meld - BOY did they ever! YUM! I could have eaten that plain with spoon. The rub for the steak was also amazing. I did leave the cinnamon out, really don't think it needed that and it wasn't missed. The rest of the ingredients were loosely measured. Rubbed it on the meat, wrapped in plastic wrap and stuck in the fridge for about 4-5 hours. Absolutely the best flavor ever! Served this all with lime cilantro rice and a chilled corn, tomato salad both from this site. Not only delicious but very easy!

Blueberry Cream Dessert

Buttery Corn Bread

10 stars! I will NEVER use a boxed mix again! This so easy, and absolutely delish! I squirted some honey in the batter, and would do that again for sure - added a nice little extra sweetness. My house smells amazing!

Cajun Chicken Pasta

Very tasty, followed the recipe more or less exactly. DO NOT over cook your chicken, next time I may cook through then remove from the pan adding back in at the end. Also, don't even think about saving for leftovers, as with most cream sauce....

Peanut Butter Noodles

Nice pasta dish, but you absolutely MUST double the sauce mix. Once the noodles sit in the fridge they will become very dry, so before you serve you will need to add more sauce, a lot more. I did not double, when I took them out to serve they were super dry and barely edible, so I quickly made another batch of sauce and poured the whole thing over the top - much better.

Saucy Cajun Chicken Breasts

Not sure where the Cajun fits in here. That said, the chicken was very good. We marinaded in the Italian dressing for a few hours, then grilled the bone-in legs and breasts basting with the BBQ sauce towards the end. The Italian dressing just adds more flavor and moisture to the chicken then plain old BBQ sauce.

Easy Paella

Easily one of the best meals I have made in a long time. Who knew, my search to use up some chicken and chorizo in the freezer would give me my families new favorite meal! Did not really change much. Used dried parsley instead of fresh, not quite a whole lemon zested and no shrimp. The rice cooked way longer then 20 minutes to get the consistency I wanted with a crispy bottom and edges. I also like the idea of making the rice and meat portions in separate pans. YUM!!

Best Breakfast Cookie

These cookies are actually very good - don't let the light and unappealing color of the photo fool you (sorry!) Mine were darker and looked more appetizing. I was nervous though, the dough was very sticky and tough to work with and when the cookies came out they smelled like raw flour and oats I was afraid I'd need to throw the whole thing out. But my kids and I loved them, very moist, flavorful and addicting! I used applesauce in place of the prune and cranberries, mini chocolate chips and pecans for my add-in. Love that you could really put in anything you want!!

Grilled Brown Sugar Pork Chops

Big hit with the family - I can only imagine how jealous the neighbors were with the smells coming from the grill!! The changes I made were apple cider vinegar instead of apple juice (didn't want it to be too sweet and wanted the vinegar to help tenderize the meat) and a heaping teaspoon of minced garlic. I left out the cornstarch until the end, marinated the meat for a good 6 hours, then boiled the marinade with the cornstarch to thicken, basting as we grilled. The result was very flavorful and tender pork! Do not overcook!! Use a meat thermometer of you may be disappointed!

Easy Lemon-Blueberry Jam

made this for Christmas gifts for friends. It was very good, my daughter eats it on her bagel every morning! I did cut way back on the sugar, I don't even think you could tell. I also used my immersian blender to make the jam smoother. The only slightly negative thing I can say is that after a few days, the consistency was sorta different. I was nervous my friends would be turned off by that. But I told everyone that this is not officially "canned" jam and the jello is the thickener so it acts more like jello, but tastes wonderful!

nice cookie, I did cut down quite a bit on the lemon extract as I was looking for more of a vanilla flavor. I'm not even sure I would use the lemon at all next time.

nice glaze, easy to alter to your desired consistency. I always add a pinch of salt to this type of frosting to cut down on the incredible sweetness a little.

Cousin David's Slow Cooker Brisket

wonderful recipe and easier then anything, made the house smell great all day long. I added a little water to thin the chili sauce, I was worried about too much tang. I also added about a capful of liquid smoke. I will for sure make this again. Maybe even try this sauce on chicken or pork!

Wonderful! Similar to a cranberry salad my mom makes but less work and not as tart. Very refreshing and surprisingly not too sweet! Will for sure make again.

Banana Banana Bread

Very good and forgiving recipe! I did not have all the butter or the full amount of bananas so I thew in some plain yogurt to compensate, plus I added the cinnamon which adds a nice warmth.
