My favorite things to cook
I like to cook all things! Appetizers, pasta, salads, chicken, desserts - you name it, I'll cook it!
My favorite family cooking traditions
I like to change things up from year to year, try new thigs and new traditions. But a few things I can never get away from are - 1) heart shaped foods on Valentine's Day - pizza, hamburgers, whatever I can shape into a heart! 2) My sugar cookies with confectioners sugar frosting for Christmas, we don't even bother to roll them out - just shape into a ball and flatten with a glass dipped in sugar. It's the only cookie I really ever need to bake 3) The slow cooker stuffing recipe from this site for Thanksgiving, it is the best and my kids look forward to that every year. 4) Last but not least, my family knows that come October, I LOVE to bake pumpkin cakes, cookies, muffins, bread - you name it! Oh, and let's not forget the roasted pumpkin seeds on Halloween! We buy extra pumpkins just to get more seeds!
My cooking triumphs
My husband used to get a curry chicken and peanuts dish from a local ethnic restaurant. When they closed years ago, I made it my mission to duplicate the recipe. After much trial and error, I think I finally got it! My curry chicken and peanuts served over basmati rice is the house special, my husband eats it at least once a week (It's also probably one of the easiest dishes I make!)
My cooking tragedies
A few years ago I was attempting to cut beef out of my diet, not really my families - just mine. One day I made sloppy joes with some sort of ground beef look-a-like soy product. It wasn't until after my husband had eaten two, that my daughter commented on the texture. I sorta smiled, and my husband freaked out thinking I used someting he would be grossed out by. Even though they all ate some, and most couldn't really tell the difference, they made me promise to bring the beef back!

Balsamic Roasted Red Potatoes
delish - I par boiled mine until almost done - then mixed with the other ingredients and tossed in the oven. Super easy, super good.

Banana Banana Bread
Very good and forgiving recipe! I did not have all the butter or the full amount of bananas so I thew in some plain yogurt to compensate, plus I added the cinnamon which adds a nice warmth.

Easy Apple Crisp
I use canned apple pie filling for this and also add two packs of instant cinnamon oatmeal on top for added crispness. It's a good, easy dessert to whip up. Warning though - it is VERY sweet.
