About this Cook
I would say I'm more the 'Paula Deen' type rather than 'Martha.' I love to cook for a crowd more than just for me. I use to watch my mother cook but did very little of it until I got married. I really learned on my own and testing it out on him. I am widowed and love for the kids and grandchildren to come so I can cook for them.

Cheese Enchiladas
Maybe in Louisana ?? they make these, but in New Mexico you would not use tomato sauce or paste for enchiladas. You use red chile sauce. I would have to give this a one star as it doesn't compare with a "real" enchilada and I think this one should be renamed. Sorry, but, I didn't care for it at all and would not make it again. I noticed that a lot of the other reviewers DID use red enchilada sauce when they made this, as would a true Southwesterner.

Creamy Banana Bread
I can see this tasty bread tied up with pretty red and green bows for Christmas gifts for some special people! Very good recipe! Thanks Pam, for sharing!

Eggnog French Toast
I had company last week-end and decided to make this. EVERYONE loved it! and wanted the recipe. Only thing I did differently, was to cook each slice in a skillet with a little butter instead of baking the slices. Then I sprinkled with a little powdered sugar. Some had a nice buttery syrup on top, too. Will certainly make this again. (Family thought they were at a Bed and Breakfast with this one!) :)
