About this Cook
I am married with 2 kids. We live in western PA. I am a stay at home mom, but do lots of charity work.
My favorite things to cook
I love to bake!
My cooking tragedies
When I was just starting out, I thought 4 cloves of garlic meant 4 heads of garlic....that was the worst chili ever! Also, I mistook a pork roast for a ham. It's a wonder my husband married me!

Guinness(R) Corned Beef
I started with the flat piece of corned beef and rinsed it under cold water to get rid of some of the greasiness. I also cut off as much of the fat as possible. I rubbed it all over with brown sugar and placed it in a crockpot. I didn't have Guinness, so I poured a bottle of Sam Adams Winter Ale around the meat, then water to cover. I also used the spice packet included in the corned beef. I cooked it for about 3 hours, added chopped potatoes, onions, and thinly sliced carrots and cooked another 6 hours, for a total of about 9 hours. It was super tender and delicious. Even my picky kids loved it!

Super-Delicious Zuppa Toscana
This was great. My only changes were that I used italian turkey sausage, and I only used about 1/3 cup half and half instead of the one cup of heavy cream, which was plenty. You will not miss the extra fat and calories! Next time I will probably add another potato or two. Thanks for a good recipe!

Antipasto Squares
I had these at a superbowl party. They were fantastic! The roasted red peppers were the highlight.
