Blackened Chicken
Great everyday recipe especially when you want to get dinner on the table fast and you have not marinated anything overnight. I doubled the seasoning and butterflied the chicken breast. I cooked each side for 4 minutes and skipped the oven. I added a pat of butter to the pan for some moisture towards the end of cooking. Seasoning penetrated well and was balanced. I served with red beans and rice from a box and canned corn. I will make this again.

Creamy Italian Dressing I
Good basic recipe. I don't like my dressing so tangy so next time I will reduce the red wine vinegar to less than half. Usw whatever combiation of herbs you have on hand if you don't have italian seasoning. I used parsley, thyme, rosemary, and oregano. Add the sugar gradually to your liking.

Thai Fish Cakes
These were ok, nice and quick as an appetizer for a party. I would put more fish or not pulverize the fish so much in the processor so you feel like you are eating and tasting fish.
