Pumpkin Zucchini Bread
This is a great recipe to make into muffins -- so portable and easier to serve. I also used a cup of trail mix that included sunflower seeds, cashews, peanuts and more in place of the walnuts. I sprinkled toffee chips on top of each muffin also.

Blueberry Zucchini Bread
I used this recipe and made muffins. I added about 2 tablespoons of molasses and a dash or so of nutmeg also. I made a crumb topping with granola, softened butter and white and brown sugar, and cinnamon. They were so yummy!

Zucchini Corn Fritters
I really did not care for this recipe. Thought that it was too doughy and bland tasting. I am very surprised at all the good reviews and wonder if someone can tell me what I may have done wrong? I followed the recipe exactly.
