Vegan Chocolate Cake
This cake totally rocks. It's nice and moist and goes well with a cherry compote I made (cook dried cherries with cherry cider, brandy, and sugar). MMM!

Freezer Persimmon Jam
This was quite good. I have enjoyed it along with cream cheese on whole wheat bread. (The cream cheese cuts some of the "fuzzy" flavor if you didn't have the patience to let your persimmons ripen completely :)

Spaghetti Squash I
I invented a similar recipe, and encountered this one after the fact. Mine is almost identical, but I used rehydrated sundried tomatoes in place of fresh/canned. That, along with salt-cured French black olives, lended a particularly intense flavor that I liked.
