About this Cook
I'm a mother of 3, college student, and I work part time. I'm a *most of the time* vegetarian, I will eat seafood in a pinch. I have ALWAYS loved cooking, and especially love experimenting with ethnic cuisine.
My favorite things to cook
I love Indian and Spanish food, so I cook them often. I also have a really picky husband (not to mention the kids), so I like to figure out ways to work in some of my food flair into his everyday favorites. I also love baking confections, and making candies.
My favorite family cooking traditions
I grew up making old German family cookie recipes during the holidays, and am passing this tradition to my kids. My grandmother is so happy that I enjoy this tradition because it seems that no one else in the family really cares any more.
My cooking triumphs
Last week I made my version of Puerto Rican style rice and beans (arroz con gandules) for my husband's Puerto Rican family members. I was SO nervous that they wouldn't like it. SCORE! They loved it. Several even said they likes mine better than their own mother's!!! Great compliment to me, slap in the face for her, LOL! I also adapted a pumpkin ginger bread recipe to make it extremely healthy. I didn't tell anyone about my substitutions, and they raved that it was the best they'd had. No one knew it had splenda, whole wheat flour, and no oil!
My cooking tragedies
Man, roll out dough gets me every time. No fun cookie decorating for my kids. EVER. I hate it THAT much.

Spinach Quiche
This was REALLY GOOD. I had to give 4 stars because it's a GOOD THING that pie crusts come in 2 packs, LOL! This made so much filling that I had to grab the spare shell from the freezer, and scoop half the filling from the other, overflowing, shell. In order to get the 2 shells nice and full, I added in an extra egg each. The only other thing I changed was adding a little bell pepper and fresh seeded tomato to make up for no mushrooms (I hate mushrooms). I cooked the peppers with the onion and garlic, and added the tomatoes right before the egg (so they wouldn't disintegrate). Everyone loved it, which is saying something coming from my veggi-phobic family. And yes. I definitely used deep dish crusts ...

Cheater Pancake Syrup
I've been seeking out DIY recipes to replace products we normally purchase at an inflated price with artificial ingredients, so in that regard, this recipe foots the bill. However, it was WAY sweet! I mean, it's syrup, so, duh, but WAY WAY WAY sweet, lol. It was good, but next time I will attempt with 1c white sugar and 1.5c water just to see what happens. At the very least, I can boil longer to achieve greater thickness and evap some water. I added homemade pure vanilla extract, 1/2 stick cinnamon (while cooking), and a couple tbs real maple syrup for flavor (didn't have any extract).

Taco Seasoning I
This is the FIRST time that my husband said the homemade version was BETTER than the pre-packaged version. I whole heartedly agree. I did add extra garlic because we like it, and reduced the cayenne cause my kids are weenies. That's the beauty of this stuff, totally customizable to one's tastes! When I used it, it took about 2 tb for a little less than 1lb of meat. I added a slurry of 1 tsp cornstarch and about 1/4c water to the pot to get that sauce effect. This also worked nicely on my Morningstar Farms "grilled chicken" stuff (I don't eat meat), just be careful because the soy or whatever is used to make the fake chicken really pulls in the moisture.
