About this Cook
I am a single mom of two wonderful children - ages 6 and 12. I have a great boyfriend, who loves to eat whatever I cook for him, so he is my guinea pig!! My favorite past times are being outdoors, cooking, reading, hanging out with my kids and being creative. :-) I also enjoy coming here and adding recipes to my recipe box, which has gotten out of control!! I need to quit adding recipes and get busy cooking them!!!
My favorite things to cook
I love to bake. So cookies, cakes and pies. Those are probably my favorite things to eat too!! And I love to make soups in the winter!!

My cooking triumphs
This past Easter I put together a menu and prepared everything on it for 7 adults........garlic cheese grits, fresh green beans and bacon, cranberry spinach salad, rolls, caramel crunch apple pie and a peanut butter ice cream pie!! (okay I ordered the ham!!) This was a first for me and I was a nervous wreck. Everything turned out great and was ready at the same time and warm even!! Plus, I got rave reviews on more than 1 of the dishes. :-)
My cooking tragedies
Nothing too horrible - I was making glazed pecans (the second batch as my boyfriend & I had eaten most of the first that was for company!) and I added 1 tbsp. of salt instead of 1 tsp. to the "glaze" mixture - needless to say those got thrown away! YUCK!!! Also - the apple enchiladas from this site were pretty pathetic! YUCK AGAIN!!

Butterscotch Bread Pudding
This was my first ever time making bread pudding. I used Texas toast and wasn't sure whether or not to tear off the crust, but did anyway. It turned out wonderful. I topped it with fresh whipped cream. Mmmmmmmm.........

Chewy Chocolate Chip Oatmeal Cookies
These were pretty good. I wasn't crazy for them and this recipe won't be something I make again. I'm more of a fan of the crisp cookie, and this was too soft for me. But the name does says CHEWY, so I should have known!
