Peanut Butter Bars I

These really do taste like Reese's peanut butter cups. These are super rich, I cut them into 24 squares instead of 12 and I think they're still decent-sized. I used 1 and 1/3 cups of butter, any less and it would have been too crumbly. Very decadent but easy to make. My only gripe is that the chocolate is too hard. Next time I might use a milk chocolate ganache topping.

Oatmeal Pancakes

Quick, easy and delicious. Those three alone give it 3 stars at least in my book and then an extra star because I would definitely make this again. I used old-fashioned rolled oats (because that's what I use to make oatmeal) and just let the batter sit for 10-15 minutes or so after I mixed with the wet ingredients so the oats could soak up the milk. I added chocolate chips to the recipe because I didn't have any syrup on hand and can't eat pancakes without something sweet or savory but they would do just fine without chocolate chips. Next time, I may add some fruit like bananas or blueberries.

Chewy Peanut Butter Brownies

I should give this recipe 0 stars for the directions. 30 minutes is WAY TOO LONG for these brownies. I took mine out after 22 and they were already dry, I can't imagine how they would come out if someone actually followed the recipe. 1/3 cup of butter is not enough to make moist brownies. These were dry and crumbly. I would advise if you are going to make this to add more butter (maybe 1 stick), lessen the flour (by 1/4 cup) and bake for only 20-25 minutes (depending on your oven). I'm not going to bother making this again. Wasted my time and half a jar of peanut butter on this recipe, that was enough.

Triple Berry Crisp

Really good. Very easy to make, I followed the recipe exactly except that I used blueberries, raspberries and strawberries. The blueberries and strawberries were frozen so I kept it in the oven for another 10 minutes more. I would definitely make this again.

Quick Creamy Spinach and Tomato Pasta

Added sliced chicken sausage and 1 large fresh tomato and I used tomato sauce instead of diced tomatoes. Also went with low-fat sour cream and whole wheat pasta. Topped it off with a sprinkling of shredded Parmesan cheese. Delicious. Would definitely make again.

Berry Smoothie

Very thick and filling. I make single servings with half a cup of strawberries and a third a cup of blueberries. I followed the advice of others and added a small container of plain non-fat yogurt as well as milk. It didn't blow me away but it was quick, easy and tasty and when running to work in the morning, that's what's most important.

Grilled Indian Pork Kabobs with Sweet Onions and Red Bell Peppers

Delicious and easy to make. To give it a more authentic Indian flavor, I added 1 tbsp of ground cardamom. Would definitely make again, maybe using chicken.

Quick and Easy Brownies

Followed the recipe as directed but left out the nuts because I don't like them in brownies. Came out great! Baked them in a 9x9 round pan so it took closer to an hour to bake so not so quick but definitely easy. Personally, I don't subscribe to the dump all ingredients into the bowl and mix method. I mix dry and wet separately then add the wet to the dry to combine. You're just much better able to ensure that the ingredients mix evenly.

Florida Strawberry Bread

I scaled the recipe down in half and substituted the oil for about 3/4 cup of applesauce. I had some frozen strawberries and blackberries that I threw in there. I also added some nutmeg in addition to the cinnamon to the dry mix. Thought it tasted great and was so easy to make.

Easy Batter Fruit Cobbler

Good but mushy. I think next time I will bake for 60-70 min at 450 because of the frozen fruits. But it was very delicious, I made this with frozen strawberries and blackberries and used half the amt of sugar and replaced the rest with Splenda (6 single serving packets). If there is a difference, I definitely didn't taste it.

Cheese Soup with Broccoli

Really delicious and surprisingly easy to make. I love Broccoli Cheddar soup so now that I have this recipe, I can make it any time I want. I used shredded cheese which cuts down the time as it melts almost instantly (you should take the pot off the burner at this time) and I hate Velveeta. The only other thing I would do differently next time is to stick the onion in a food processor for a finer dice. Other than that, I loved.

Mexican Lasagna II

Okay, so yeah, I've become one of those people on this site that make major changes to a recipe and then make a review based on those changes even though it's much different than the original. So be warned: not the original. I don't like refried beans, never got into them. Instead I used canned black beans (2 14oz), drained, rished and then mashed. I mixed in about 1/3 cup of sour cream and set aside. I didn't have any ground beef on hand so used ground turkey. Instead of taco seasoning which is loaded with sodium, I just seasoned the meat myself with cumin, garlic, onion and coriander. I also added one chopped sweet onion and 3 strips of cooked, crumbled bacon to the mix. I used half a jar of salsa and then layered that with beans and tortillas and of course, added lots of Mexican blend cheese. The result was fabulous! I will definitely make this again and actually, except for all the cheese (2 cups), it turned out to be a very healthy dish. Next time, I will follow the recipe when it comes to adding tomatoes, which I regret not doing because the salsa alone wasn't tomatoey enough for me.

Chocolate Ganache

I think the heavy cream to chocolate ratio is a bit much. It'd be hard to make truffles following this recipe as it will never get to a solid enough state no matter how long it's been refrigerated. Works great as a topping for a cake though.

Too Much Chocolate Cake

Despite the fact that this is one of THE most celebrated recipes on this site, I can't bring myself to give this any more than a 3. Let me start off by saying that I'm not that much of a cake lover so maybe I'm biased. But with all the 5-star reviews, I had to try this. I should have gotten my first warning by the fact that the base of this cake comes from a box. Sorry, but add all the extras you want, this is nothing more than a dressed up Betty Crocker/Duncan Hines, whatever and it tastes like it. There was nothing special about it, I didn't feel the sour cream or extra oil added much density to it. Maybe I should have used two eggs and two egg yolks, not sure but I've tasted 5-star cakes before and this is not one. If I ordered this in a restaurant, I'd consider it a waste of money. Because this is a cake mix cake, it's lacking in any real chocolate flavor. To be honest, there was no depth of flavor at all. I would definitely recommend using mini chocolate chips. The regular-sized ones don't sink as someone else suggested but texturally, I think mini chips would work better. I thought for all the fat in the cake, it lacked moistness and density that I was expecting. Sorry but won't be making this again.

Grilled Ginger-Peanut Pork Tenderloin

Like others, I didn't taste any of the peanut butter in this and I had even doubled the amount and used 2 tbsps of pb. Bland dish, really needs more spices to make this anything more than a just "eh" meal. Won't bother making this again as the "Thai Pork Satay" dish on this site is much more flavorful and better in incorporating peanut butter and pork.

Oriental Asparagus Salad

I recommend using sesame oil for more "oriental" flavor. Also, I felt that 2 tbsps of soy sauce made the dish too salty. Next time, I'll use just one.
