Curried Coconut Chicken
I thought this was awesome. A few things I altered to our taste was to only add 1 tbsp. of sugar. I also used red curry paste instead of powder. After the chicken had been cooking for a couple minutes, I added a julienned red pepper. Didn't have trouble thickening, but simmered uncovered for almost an hour. Served over basmati rice with a squeeze of lime juice, a few sliced scallions, cilantro and a few chopped cashews. YUM!! My husband asked to have this added to the "rotation"!
