Cupcake Graveyard

Made these tonight (I know- a week late) and the kids loved them. I used chocolate frosting, crushed oreos for the dirt and Milano cookies for tombstones. A big hit and super easy.

I cooked half an onion and 2 stalks of celery with the ground beef, as well as adding 2 cloves of garlic, fresh basil, fresh parsley, fresh grated parmesan cheese and dried oregano to the mix. I also only kept it in the oven long enough to melt the cheese- not brown it. It was delicious- even my kids ate it up. With some added ingredients, it is a 5 star recipe. Will make again.

Cheesecake Bars

Not bad. Cheesecake flavor in an easy to make bar. I wasn't overly fond of the pastry bottom, or the filling itself, as it was not as rich and decadent as a good cheesecake is. I did double the filling- and thank god I did because it still didn't seem like enough- I can't imagine how thin these bars would have been as written. My advice- don't make them without doubling the filling! Were they easy- yes! And that was their saving grace. I needed a dessert in a hurry, and they did come out of the pan beautifully. I served them drizzled with a Mango sauce which helped dress them up. A good recipe in a pinch, but not as satisfying as a real cheesecake.

Lemonade Pie IV

It doesn't get much easier than this! It's not overly sweet which we liked. Not all my filling fit into my pie plate/crust, so next time I probably won't put in all the whipped topping. My husband and I enjoyed it, but for some reason the kids didn't, so I'm giving it four stars.

Cake Mix Cookies VIII

Awesome! Used milk chocolate cake mix, added 2 tsp oil, as other reviewers suggested, used 1 cup M&Ms instead of chocolate chips. Recipe made exactly 24 cookies, baked them for 8 minutes, looked underdone but came out perfect after sitting. Kids gobbled them up, and I think they were even better the second day. So easy, I will be making these again soon!

Zucchini and Potato Bake

I wasn't really impressed. The only flavor was the italian breadcrumbs. I cubed the potatoes and left the zucchini in bigger chunks, so I didn't have a problem with the cooking time. My kids picked the potatoes out and left the pepper and zucchini, hubby said it was just okay. Won't make again as is- maybe if it had tomatoes, or other veggies, and I added cheese it would be tastier.

Broccoli Chicken Casserole I

Was this a quick and easy dinner solution to a hectic day? Yes. But did we like it? Not really. I used 2 cans of soup- 1 cheese/broccoli and 1 cream of mushroom, and used about 3/4 cup of milk instead of mayo. It was still on the dry side, so I can't imagine with only 1 can of soup, and I found it VERY salty. With 2 cans of soup, the stuffing mix, and cheese the saltiness is off the charts. We ate it 3 nights ago, but none of us have gone back for leftovers, and while I do supply my grandparents with meals during the week, I'm afraid the sodium count on this is way too high for their strict diets.

Mock Mincemeat Pie

I'd never had mincemeat before. Made it as directed, with apples we had just picked. Had a lot of liquid, so along with the saltines, I stirred in some cornstarch I had dissolved in OJ. That kept the cut pieces from being too runny when we served it at room temperature. I had made a lattice-top. The taste was not orangey as I thought it would be considering the juice and zest, and I even added a tbs of grand mariner to the stovetop mixture. The taste of cloves was a bit overpowering for me, but my husband really enjoyed it. Would make it again with less cloves, and maybe add nutmeg and vanilla.

Christmas Breakfast Sausage Casserole

Had a brunch yesterday and this was the first thing that went. Everyone loved it- two people asked me for the recipe. I didn't even get to taste it! Made it with 8 pieces of bread and 6 eggs, kept everything else the same. A big hit!

Lemon Berry Slushy

This was a nice drink for a hot summer day. I agree with other reviewers that found it tart, though. Next time I'll cut down on the lemon juice. I also used the berries frozen instead of thawing them, therefore needing less ice.

Bandito Beans

Pretty good. I used fresh green and wax beans, and frozen black-eyed peas instead of black beans. Followed the recipe the rest of the way- cooked on the stove in my dutch oven instead of a crockpot. Flavorful, sweet and savory, but the fennel was a bit much, next time I'll leave it out.

Pam's Bierocks

I had never heard of Bierocks or Runzas before, but the recipe sounded good and I'm glad I tried them. These were so delicious! The dough is perfect- so soft and tasty- although I did have to add additional flour since it was quite sticky to work with at first. The recipe yielded 25 bierocks, which were gone in about 48 hours. I added some fresh thyme and parsley to the filling, but kept everything else the same. Will make these again and again. Thanks!

Buffalo Chicken Chili

This chili was excellent! I used 1 can of kidney beans and 1 can of refried beans, which thickened it up a bit. I also added a can of diced tomatoes in lieu of some of the sauce. Very good recipe.

Creamy Succotash with Bacon, Thyme and Chives

Grilled Chicken Salad with Seasonal Fruit

Wow! This was really good. I used iceberg instead of bib lettuce, and added radishes because my 5 year old loves them. I only used 1/3 cup sugar and 3/4 cup oil for the dressing, and used fresh strawberries. Will definitely make again- everyone enjoyed it.

Pizza Dough III

Wow! I've been using the Jay's Signature dough from this site for years and thought it was the best, but once I tried this one there's no going back! I gave it a shot this weekend with the chicken pesto pizza recipe from this site, baked it for about 30 minutes at 400 degrees and it was perfect- golden, chewy, not bready at all. Will use this recipe from now on- thanks!
