Cream Cheese Frosting II

Delicious! I, like other reviewers, only used 1 pkg of cream cheese, and slightly more sugar. Quick, easy and yummy- will make again.

Broccoli Chicken Casserole I

Was this a quick and easy dinner solution to a hectic day? Yes. But did we like it? Not really. I used 2 cans of soup- 1 cheese/broccoli and 1 cream of mushroom, and used about 3/4 cup of milk instead of mayo. It was still on the dry side, so I can't imagine with only 1 can of soup, and I found it VERY salty. With 2 cans of soup, the stuffing mix, and cheese the saltiness is off the charts. We ate it 3 nights ago, but none of us have gone back for leftovers, and while I do supply my grandparents with meals during the week, I'm afraid the sodium count on this is way too high for their strict diets.

Mock Mincemeat Pie

I'd never had mincemeat before. Made it as directed, with apples we had just picked. Had a lot of liquid, so along with the saltines, I stirred in some cornstarch I had dissolved in OJ. That kept the cut pieces from being too runny when we served it at room temperature. I had made a lattice-top. The taste was not orangey as I thought it would be considering the juice and zest, and I even added a tbs of grand mariner to the stovetop mixture. The taste of cloves was a bit overpowering for me, but my husband really enjoyed it. Would make it again with less cloves, and maybe add nutmeg and vanilla.

Christmas Breakfast Sausage Casserole

Had a brunch yesterday and this was the first thing that went. Everyone loved it- two people asked me for the recipe. I didn't even get to taste it! Made it with 8 pieces of bread and 6 eggs, kept everything else the same. A big hit!

Basic Flaky Pie Crust

Lemon Berry Slushy

This was a nice drink for a hot summer day. I agree with other reviewers that found it tart, though. Next time I'll cut down on the lemon juice. I also used the berries frozen instead of thawing them, therefore needing less ice.

Bandito Beans

Pretty good. I used fresh green and wax beans, and frozen black-eyed peas instead of black beans. Followed the recipe the rest of the way- cooked on the stove in my dutch oven instead of a crockpot. Flavorful, sweet and savory, but the fennel was a bit much, next time I'll leave it out.

Pam's Bierocks

I had never heard of Bierocks or Runzas before, but the recipe sounded good and I'm glad I tried them. These were so delicious! The dough is perfect- so soft and tasty- although I did have to add additional flour since it was quite sticky to work with at first. The recipe yielded 25 bierocks, which were gone in about 48 hours. I added some fresh thyme and parsley to the filling, but kept everything else the same. Will make these again and again. Thanks!

Buffalo Chicken Chili

This chili was excellent! I used 1 can of kidney beans and 1 can of refried beans, which thickened it up a bit. I also added a can of diced tomatoes in lieu of some of the sauce. Very good recipe.

Creamy Succotash with Bacon, Thyme and Chives

This was wonderful! I didn't have any cream, so I used evaporated milk and a pat of butter. It was so easy to make, and tasty and filling- even the kids cleaned their plates. Will be making again- thanks!

Grilled Chicken Salad with Seasonal Fruit

Wow! This was really good. I used iceberg instead of bib lettuce, and added radishes because my 5 year old loves them. I only used 1/3 cup sugar and 3/4 cup oil for the dressing, and used fresh strawberries. Will definitely make again- everyone enjoyed it.

Pizza Dough III

Wow! I've been using the Jay's Signature dough from this site for years and thought it was the best, but once I tried this one there's no going back! I gave it a shot this weekend with the chicken pesto pizza recipe from this site, baked it for about 30 minutes at 400 degrees and it was perfect- golden, chewy, not bready at all. Will use this recipe from now on- thanks!

Chicken Pesto Pizza

This was a great meal! I rinsed the artichokes well and used slightly less pesto after reading other reviewers saying it came out too salty. I used Mozzarella cheese because that's what I had on hand, and I sprinkled parmesan on it before I baked it. Because some people said the chicken came out dry, I put it on the pizza before I sprinkled the cheese on, and it didn't dry out that way. Absolutely delish!

Italian Confetti Pasta Salad

We really enjoyed this. Made as written, except used Balsamic Vinegar because that's what I had on hand. A warning to those who do this- it still tastes great, but gives the dressing a gray/brown hue, which isn't very attractive. But even my picky kids ate it so you know it was good!

Pear Honey

I made this in my crockpot with Bartlet pears. I added only 4.5 cups of sugar and it was quite sweet. I added the sugar after the pears were broken down, and the final product ended up looking like a thin applesauce. It tasted very good, was easy enough, but I didn't find it honey-like at all, in taste or appearance.

Pumpkin Chocolate Chip Muffins

These were a huge hit with my kids! I made mini muffins out of them, frosted them with cream cheese frosting, and put some sprinkles on top. My kids couldn't get enough of them. I also used fresh pumpkin instead of canned. Will make again and again.

Creamy Pumpkin Pie

Loved it! I planted "Valenciano" a white pumpkin, in the spring, and it gave us the pumpkins we used for our Jack-O-Lanterns. Instead of just throwing out the flesh, I baked it and then whizzed it up in the blender to get the puree to make this pie. I only used 2 cups of pumpkin puree and it filled the 9" pie pan perfectly. My 1st attempt at a pie with from-scratch pumpkin and it was awesome.

Awesome Baked Sea Scallops

This was so simple, yet so good! I usually pan sear scallops, but I wanted something different. I squeezed lemon juice in with the melted butter, used scallions instead of shallots, baked for 11 minutes and they came out perfect. Thanks for a great recipe!

Cranberry Puffs

These were just okay. All I could taste was the jalapeno, the cranberries added color, but not much else. The sugar didn't make it sweet. I could've just mixed jalapenos with cheddar and cream cheese and left out the other ingredients. Wouldn't make them again.
