I'm a happily married SAHM who loves to cook. I've always loved being in the kitchen- whether cooking or (especially) tasting. I enjoy sampling ethnic cuisine, trying new recipes, and encouraging my children's kitchen experiments.

I enjoy simple comfort foods- soups, stews, braised meats, roasts, etc....especially in the fall and winter.
My cooking triumphs
I love making bread; it's so satisfying to pull a loaf of what the supermarket would deem "Artisan Bread" out of your own oven.
My cooking tragedies
The first time I ever roasted a chicken, I left the bag of innards inside the cavity. Isn't that sad?

Broccoli Chicken Casserole I
Was this a quick and easy dinner solution to a hectic day? Yes. But did we like it? Not really. I used 2 cans of soup- 1 cheese/broccoli and 1 cream of mushroom, and used about 3/4 cup of milk instead of mayo. It was still on the dry side, so I can't imagine with only 1 can of soup, and I found it VERY salty. With 2 cans of soup, the stuffing mix, and cheese the saltiness is off the charts. We ate it 3 nights ago, but none of us have gone back for leftovers, and while I do supply my grandparents with meals during the week, I'm afraid the sodium count on this is way too high for their strict diets.

Mock Mincemeat Pie
I'd never had mincemeat before. Made it as directed, with apples we had just picked. Had a lot of liquid, so along with the saltines, I stirred in some cornstarch I had dissolved in OJ. That kept the cut pieces from being too runny when we served it at room temperature. I had made a lattice-top. The taste was not orangey as I thought it would be considering the juice and zest, and I even added a tbs of grand mariner to the stovetop mixture. The taste of cloves was a bit overpowering for me, but my husband really enjoyed it. Would make it again with less cloves, and maybe add nutmeg and vanilla.

Christmas Breakfast Sausage Casserole
Had a brunch yesterday and this was the first thing that went. Everyone loved it- two people asked me for the recipe. I didn't even get to taste it! Made it with 8 pieces of bread and 6 eggs, kept everything else the same. A big hit!
