Cool Off Smoothie
I liked this a lot--I used pineapple orange juice and a tsp of honey to sweeten up--YUMMY!

Baked Mashed Potatoes
This was a hit with the in-laws! I used green oinions to add some nice color and lite cream cheese and an egg substitute to cut back where we needed to!
