My favorite things to cook
I like experimenting with new ingredients and making new things. I have trouble following recipes, I just kind of use them as outlines or inspiration.

Christmas egg casserole, and mom's Christmas candies.
My cooking triumphs
My best cooking usually happens when groceries are running low and I am forced to be creative. My husband does not qualify ingredients as food, and I have so much fun being creative and serving a delicious healthy meal when no one else can find anything to eat in the kitchen.
My cooking tragedies
There was this baked french toast recipe that I got off of the label of a jar of preserves. It had about half a jar of blackberry preserves in it, among other things. It was cloyingly sweet, and inedible. I thought it would be easy for when guests came because all of the prep work happened the night before, so it sat in the fridge overnight and baked in the morning. I should have given it a test run before serving it to company. No one ate more than a bite before we decided to go out for breakfast.

Banana Fritters
I substituted whole wheat flour and honey instead of sugar. If you like really sweet you may want to increase the honey to counter the whole wheat flour, but I prefer slightly less sweet and this was perfect. After frying I drizzled more honey and dusted with cinnamon. It eliminates all of the refined sugar and flour, and is still delicious! About as healthy as a donut is going to get!

Banana Cupcakes
I made these with whole wheat flour and a simple cream cheese frosting for my son's first birthday. Based on other reviews I substituted softened butter and whole milk for the shortening and buttermilk. The adults said they were good, and my baby seemed to thoroughly enjoy his first cake experience!
