Curried Coconut Chicken

Loved this one! I followed the recipe to the letter and it did not disappoint. It was just what I was looking for. I wouldn't change a thing. My only "complaint" is that my house smelled of curry for several days afterward--ha! Will make this one again.

Cornish Game Hens with Garlic and Rosemary

Loved this! No stuffing and trussing to fool around with! I didn't have a lemon, but I did have a lime so I used that--worked beautifully. I didn't bother with any of the reducing pan juices, etc. I just served the game hens when they were done (with a nice rice pilaf alongside) and they were fabulous. Another time, I will go the extra mile, but for a Tuesday night after work....this was just fine!

Sharese's Spaghetti Salad

I've made this for years. The only thing different is that instead of bacon, I always toss in a "handful" of sliced mushrooms. The salad seasoning I use is Schilling Salad Supreme. This make a tremendous amount and goes over well at potlucks and BBQ's. Thanks for reminind me of this tried and true favorite!

Swiss Chicken Casserole II

I followed this recipe to the letter except for 2 things. First, I used boneless, skinless thighs; second, because I didn't have the stuffing mix on hand, I used some herb-seasoned croutons! Every bit as good as the stuffing mix, I would imagine. I chose to use them whole which made the topping bulkier, but maybe next time I will crush them up a bit. This is a rich dish and is fabulous over plain white rice. I will make again. Thanks for sharing!

Honey Roasted Red Potatoes

I didn't change a thing. Of course, I ALWAYS want to make something the way it is written before I suggest changes or criticize. We loved this with the salmon I served with it. The only thing I did was use red onion instead of yellow or white because it's what I had on hand. When the dish was done, I covered with foil and let it rest until the salmon was done. The flavors seems to blend even more. Hubby wants me to make this again--soon! Thanks for sharing this one!

Field Grade Spaghetti Sauce

We loved this one! The allspice and cinnamon add that "something elusive" to the flavor. I used 1 lb. ground turkey and 1 lb. lean ground beef. I also used about 1 cup sliced fresh mushrooms rather than canned. Will definitely make this again. Thanks for sharing!

Honey Baked Chicken II

We liked this one a lot. I did reduce the butter as others suggested and I used boneless, skinless thighs. Because I used boneless chicken, the cooking time was only about 40 minutes. After 20 minutes, I turned them over. I'm thinking of using peanut oil rather than butter next time. Not sure yet. :)

Mexican Bean Salad

A LOT of ingredients! I took this to work today for a potluck and it seemed to go over very well. I didn't have cannelli beans, but used another white bean and I didn't have fresh lemon or lime juice so used bottled juice. Otherwise, I didn't change a thing. I will make this again. Roasted Garlic Cauliflower

We really enjoyed this. However, I didn't use a whole head of cauliflower as I had already bought florets. What I found to be a problem was that the garlic and parmesan cheese both scorched before the cauliflower was completely done. This whole dish actually only took about 25-30 minutes to complete. I'll make it again, but will have to really watch the progress so it doesn't burn.

Linguine Pescadoro

FABULOUS! Didn't change a thing...we couldn't get enough! One thing: I used fresh lemon zest and that absolutely makes this dish sing. In emergencies, I do use the dried stuff but really wanted to make this as written and am so glad I did. Thank you so much for sharing this with the rest of us!

Texas Ranch Potato Salad

I scaled this down to 6 servings. We loved this. I served it with Bunkhouse Beans (also from this site) and grilled steaks. Great meal! I used the full package of dressing mix which caused it to be a bit too salty so I'll adjust that next time. Thanks for this different potato salad. I'm always on the look-out!

Bunkhouse Beans

I made this for an After-Superbowl dinner last night and we liked it a lot. I didn't have hotdogs, but I did have a package of fully-cooked smoked chicken and sun-dried tomato sausage that I substituted--good choice! Also, I didn't see until too late that I should have drained the pork and beans. It didn't matter that much but for the fact that there was a lot of liquid. I just served them with a slotted spoon. Thanks for sharing this one!

My Best Clam Chowder

Wonderful--nice and thick the way we like it! The only changes I made were to use chopped clams instead of minced (they're slightly bigger) and I substituted low-fat half-and-half for half of the half-and-half. Ha--say that 3 times! Thanks for sharing!

Russian Mushroom and Potato Soup

I saw this and sent it to my mom who loves to make soup. She gave my husband and me half and we LOVED it! She, like I, never change a recipe the first time we make it so as to see what the originator of the recipe intends for it to taste like. With that in mind, my mom didn't change a thing. This recipe needs no altering. I'm going to make it soon. Thanks for sharing!
