Caramel Pecan Pie
It was fantastic! Just like the restaurant's were the comments from the guests! I made my own pie crust ( used a new recipe which included sour cream in the dough)..it was fantastic. The filling in the pie is so tasty you want to have more! Was easy to make, except the peeling of the 36 caramels, but well worth the effort! Being new to making dessert, I was not sure of myself, but ALLRecipes.com has yet to disappoint me. Thanks for the recipe!

Chocolate Pecan Pie II
It was great. Made the two pies with a "ready made" Graham crust (so I cheated), but nobody was able to tell the difference, 'cause the reviews from the family memebers were: "Hey this is just like the restaurant". Next time I will try with a normal dough to see the difference; but the Gaham was great; very rich , very tasteful!

Colleen's Slow Cooker Jambalaya
We had our annual pool theme party over the weekend, this yewar was Mardi Gras; the jambalaya recipe was fantastic. I had scaled it for 48, and made 10 cups of long grain rice on the side. Everyone loved it tremendously. A little spicy, but not overly for anyone to say "NO thanks"...as a few were allergic to shrimps I omitted the shrimps, and increrased the sausage to 1.5 times. This redcipe was great cause it was easy to get ready...since it was too big for my Slow Cooker, I used a Roaster Oven, and cooked it at 250F and 200F most of the day (approx. 7 hours). All enjoyed it tremendously. Served with Cajun Ribs, Corn, and many other dishes along with the Mardi Gras King Cake, the parety was ahuge success, all were dressed in Mardi Gras attire. Wild!
