Things are changing around my house, for the better for sure, but a big change nonetheless! My husband graduated college in early May and had a spinal fusion a little over a week later. He's now almost 2 months post-op and got clearance about 2 weeks ago to start working so he was FINALLY able… MORE

About this Cook
I love preparing meals for my family, I grew up eating home cooked dinners as a child, and felt that time around the table was very special. It gives me a LOT of pleasure to prepare something my family enjoys!
My favorite things to cook
I cook with a lot of chicken, we prefer boneless, skinless breasts. I don't think I have a preference for a certain style of food, or ethnicity. I cook mainly simple, meat and rice/pasta/potatoes kinds of meals. I enjoy trying different flavors and fixing new recipes. We enjoy italian, southern, mexican, etc.
My favorite family cooking traditions
It's sort of a tradition in our house to have biscuits and gravy every weekend, usually Saturday morning. My husband grew up in the South, and it's comfort food! I love preparing a Traditional Thanksgiving Dinner: Roast turkey, green bean casserole, mashed potatoes, stuffing, rolls, and cranberry jelly... MMMMM!!!!
My cooking triumphs
I think I was pretty thrilled with myself the first time I successfully made a home-made pizza crust. I am also very good with homemade breads, and very proud of my banana and lemon poppy seed breads!
My cooking tragedies
I have two classic cooking tragedies from when I had just started cooking (age 16) - the first time was when I tried to thicken gravy by adding flour directly into the HOT liquid - LOTS of clumps... it was SOO gross! The 2nd time was when I tried to make my first white sauce, and I just could NOT get the flour to milk ratio right, it was pasty and disgusting!!! I've learned a lot since then, but those are classic OOPS memories!

Chewy Chocolate Chip Oatmeal Cookies
These were great - I did add the extra 1/2 cup flour and decrease salt to 1/2 tsp - I also added about another 1/4-1/2 cup chocolate chips. :) I did the first 2 dozen drop style but did the last of them rolled in my hands and flattened a little to get the shape I was looking for. They are very good! The flavor and texture are really nice, and they definitely hit the spot with a big glass of milk!

Apple Pie
This was a GREAT pie recipe. My son loved it (and he didn't like the Grandma Ople's pie which is a favorite of mine)! The key seemed to be really letting it cool COMPLETELY before slicing to let everything gel. I did cut into one small spot before it was completely cool and it was very runny and watery in that spot, but I put it in the fridge and let it finish setting up and the rest of the pie was perfect. I halved the nutmeg and omitted the ginger and might increase the flour a little, but this was really perfect classic apple pie! (I probably used 8 cups of apples too, I didn't measure, just eyeballed). Made with Pie Crust IV.

Fruit Dip
My son loved this - it was a fantastic light dessert and he gobbled up strawberries and bananas dipped in this fluffy and sweet concoction. I cut the recipe in half and after combining the ingredients taste tested and thought it was ok, but not great, for me it had a strong cream cheesy flavor I wasn't digging. I added probably about another 3/4 cup of whipped cream along with a little more juice then chilled. It definitely complimented the fruit well and I might make this again since my son loved it so much. I thought it was good just not super special.
