Sweet Corn Bread

I used creamed corn in this recipe, upped the sugar to 1/2c, and used 1/2c yogurt in place of the sour cream (I was out of sour cream). This was delicious, my husband said we had to keep this recipe. I thought it might be a little too moist, but I can change that next time I make it (lessen the yogurt or milk). The next day, my husband mixed the leftover cornbread with an egg then deep fried it in balls for the best hushpuppies ever!! Try it, it's delicious :)

German Apple Pancake

This was absolutely wonderful!!! I did change the recipe slightly. Since I was trying to get rid of eggs, I used 6 eggs instead of 4 (this worked well). I also subbed brown sugar with the apples instead of white. I think next time I will decrease the sugar and butter in the recipe. . .perhaps 2T butter and just 1/4 c brown sugar in the apple mixture.

Big Soft Ginger Cookies

Wonderful! I used my cookie scoop, dropped the cookies into a bowl of sugar, tossed around, then placed on cookie sheet and slightly pressed down to flatten. They were beautiful. I didn't notice the dough being too sticky to work with. My family has already eaten 18 of the cookies made.

Raw Apple Cake

YUM!!! This is fantastic! Only changes: a little ground cloves and a teaspoon vanilla in the batter. Covered with the cream cheese frosting to which I added 1T cinnamon. This cake is fantastic! Even though I read in the reviews how thick the dough was, I was not expecting it to be so thick I had to pat it down in the pan with my hands. My husband who hates cake keeps asking me for bites of mine. . .wonder when he's going to break down and get a piece for himself. LOL

Tres Leches (Milk Cake)

Delicious! I did change a lot in this recipe. I separated the eggs, whipped the whites at the end and folded them in right before pouring the batter into the pan. In the milk mixture I used the condensed milk, the evaporated milk, 2 shots of Malibu rum (coconut rum), and a can of coconut milk. In the whipped cream, I added another shot of Malibu Rum and just 1/2c sugar. For garnish, I used well drained crushed pineapple, mandarin oranges, and toasted coconut. This was amazing and I will definitely make it again.

Luscious Slush Punch

We served this last night at a party. My husband said it tasted like Hawaiian punch mixed with 7-up. We had over 35 people at the party, this was the only drink served, we had a lot leftover and people were going to a vending machine to buy drinks. . .even the kids weren't very impressed with it. We won't make this again.

Slow-Cooked Tamale Casserole

My family loved this! I browned the beef with an onion and a clove of garlic. Then dumped it in the crockpot with 2 cans rotel mexican tomatoes, the olives, and 4T of homemade taco seasoning (from this site). Mixed 1c milk, the egg, and 3/4c cornmeal together and poured over the top of the meat mix. Cooked on high 2 hours, added cheese and cooked another 20 minutes. Served with a salad and sour cream. We loved this and will make it again!

Green Beans Amandine

Delish! Steamed the green beans. Used sliced almonds (all that was available where we live) and browned the butter for extra nuttiness. We all loved these, even the kids!

Too Much Chocolate Cake

Cake mixes are limited where I live so I didn't have access to devil's food. I used Duncan Hines Triple Chocolate cake. I also didn't have sour cream so I used homemade plain caspian yogurt. I made these into cupcakes for a pull apart pumpkin cake for a Halloween party. I had to frost them with vanilla frosting. They are absolutely delicious. I don't normally like anything with cake mix, but these are sooooo yummy!!

Sauteed Apples

Best recipe I've found for fried apples. I did scale it down to 4 servings and I think even with the scaled down water I should have cut it down even more (instead of 1/4c maybe 2T) because mine still had a lot of liquid. I added a sprinkle of salt (which could have brought more juice out of the apples making mine liquidy) and pepper when I added the brown sugar. I've found a little salt brings out the sweetness a little more and black pepper just adds a little spice that goes well with fried apples. My family loved them.

Big Al's K.C. Bar-B-Q Sauce

Great sauce, will use again. I was out of tomato sauce so I doubled the ketchup. It was a little too sweet, so if I have to use ketchup again I'll cut down the brown sugar.

BBQ Pork for Sandwiches

Wow!!!! Really wow!! This is one of the best recipes I've made in the crockpot...not just in the crockpot, maybe ever. This was fantastic! Made my own sauce for it from this site (Big Al's), made some creamy coleslaw, and served it up. Absolutely wonderful!

Gobble Up Granola Snacks

Yum! Used organic Koala crisp for the rice cereal. Used regular oats. Subbed honey for the corn syrup. They are very good. I don't think we will buy them from the store anymore they are so easy to make and I can use organic ingredients (since I can't get organic granola bars where I live).

Mexican Rice II

Great recipe with a couple of changes. I used homemade taco seasoning in place of the spices. Used butter instead of oil. I also highly recommend after the saute step that you put the rice and all the other things in a rice cooker...I didn't do this and mine burned on the bottom...next time I will definitely make in the rice cooker!

Chicken Enchiladas with Creamy Green Chile Sauce

We used homemade chicken stock. We boiled the chicken with onion, tomato, a lot of spices then used that for the broth in the recipe. We thought they still turned out a little bland (even with our super flavorful broth), but it is a very easy recipe to adapt next time. I think next time we will put a whole green chili in each enchilada before rolling.

Couscous and Cucumber Salad

Delicious. I added 2 diced tomatoes, about 2T crumbled feta, 1t garlic powder, and 2 English cucumbers (the long skinny ones without seeds). I used the fresh basil, but did not have access to parsley (well, I could get curly but I'd don't like to use that one in recipes. . .I prefer flat leaf). I used 2 lemons, but still didn't have enough juice so I added 1/2 of a lime. My husband and I love it. We'll see what the kids think tonight--that's the true test of a recipe's success in our home!

Good Old Fashioned Pancakes

Love how fluffy these are. Add 1T of vanilla to the wet and 1T cinnamon to the dry ingredients. I also add a couple tablespoons of wheat germ. If the batter is too thick, I add a little more milk. Sometimes I have used plain yogurt instead of milk when I haven't had enough milk or I have a yogurt about to go bad. I let the batter sit for about 10 minutes before cooking in a cast iron pan on the stove. They are fantastic!

Taco Seasoning I

We make a large jar of this and keep it on hand at all times. We did decrease the salt. We like to experiment with it, last time we used ground ancho chilis for the red pepper flake and once we used ground chipotle pepper for it. Good recipe. Way better than the stuff in the packet!

Giant Chocolate Chip Cookie

Easy, had most of the ingredients already on hand. Made in two pie plates for my daughter's birthday. Used canned Duncan Hines chocolate frosting for decorating. She loved it, her friends loved it, and their parents loved it. My son has already requested it for his birthday as well. Good recipe!!

Chilled Strawberry Soup

Used 2 10oz bags of frozen organic strawberries and upped the sugar to 3T. These were the only changes. Next time I will use half and half instead of cream as the fat was a little too much. However, it was fantastic! My daughter said that we had to add it to our family recipe book because it was the best soup she's ever had (and she loves soup). I served it with cinnamon sugar pita chips which were wonderful crushed slightly and put on top as a garnish. Fantastic!!! Will definitely make this again and again. . .
