Onion Rings

To be quite honest, I was worried these onion rings would not taste right using pancake batter, but as I had it on hand I decided to give it a try. I'm glad I did because they were great! We used standard yellow onions. These onion rings tasted just like something you would order from a restaurant. They cooked very quickly too--about 65 seconds and they were done. This one is definitely a keeper.

Asian Coconut Rice

I made this rice as directed and didn't find it to be very good. Unlike some of the other reviewers who said this was too sweet, I found it to be somewhat bland. I was trying to eat this as dish by itself, but I really think it would work better with a spicy dish served with it. As far as the recipe goes, I had no problems with the rice not cooking in the right amount of time or being too sticky, etc, but I don't know that I would make it again.

Pork Tenderloin with Dijon Marsala Sauce

I made this for my husband's birthday dinner, and it got rave reviews from everyone, including the inlaws and the kids. There were no leftovers, as several people went back for seconds. This is definitely a keeper, and I will make it again.

Sweet Potato Potato Salad

I thought this was really good, and a nice change of pace from regular potato salad. But I made a bunch of it for a family gathering and hardly anyone ate it or commented on it (while other dishes I prepared got rave reviews). So while I might make it again for my family, I won't make this again for a crowd.

Roasted Sweet Potatoes & Onions

I made this without the almonds. I wasn't sure how well sweet potatoes and onions would work together, but to my surprise, they were delicious! I made this dish for my husband's birthday dinner, and they were a hit with everyone, including the inlaws and the kids. I would suggest lightly spraying the cookie sheet/baking dish, in addition to the oil used in the recipe, as the outermost edges of the potatoes and onions seemed to burn and stick to the cookie sheet.

David's Yellow Cake

After discovering I had forgotten to buy a cake mix for my husband's birthday, I found this recipe and decided to try it based on the reviews it got. We were not impressed, and I will not make it again. I made it exactly according to the recipe, but I found it did not cook in the specified time. The cake seemed to be very dense. It didn't taste bad but it wasn't worth all the trouble either.

Zucchini Casserole II

I followed the recipe as written, and it was ok. My husband and I couldn't taste the zucchini at all. This was more like stuffing with some added veggies. Our 10 and 7 year olds complained about it, but our 1 year old ate it right up. I would probably make this again.

Ginger Glazed Mahi Mahi

My family had mixed reviews about this recipe. My husband would have given it 5 stars, the kids (9 and 7), would have given it 0 stars, and I thought a 3 was appropriate. We prepared this recipe with one minor change. We found out after we had started that we were out of honey, so we used sugar instead. The glaze tasted good, although I didn't feel like it actually "glazed" on the fish. Maybe this was due to the sugar instead of the honey, I'm not sure. Anyway, it seemed like more of a marinade than a glaze. The mahi-mahi seemed too fishy, and it overwhelmed the taste of the sauce. If we try this again, and we might, we will try a different type of fish with it.

Cheesy Ranch Potato Bake

This dish was awesome, and I will definitely make it again. Other than the tedious chore of peeling and cutting potatoes, prep was easy and the cooking times were accurate. Definitely a keeper!

Zucchini Casserole I

This recipe was pretty good, and I might make it again. The prep time is a little off, and you would need a really big bowl to mix up that much zucchini. By mistake, I only used 2 cups of zucchini and it turned out fine. I don't think I would use 4 cups if I make it again. Hubby and I both liked the dish and found it very flavorful, but the kids (6 & 9) didn't like it and complained about it (one is finicky but the other is not).

Turkey Delight

This was just OK. I used Heinz turkey gravy from the jar. It tasted really bland for some reason, which surprised me since Stove Top stuffing is not bland. My son (8) ate his portion, but my daughter (6) refused to eat hers due to everything being layered. It would probably taste better with some additional spice but I don't know if I'll try this recipe again to find out.

Valerie's Fruit Dip

I read some of the other reviews, and decided to use only 1/2 the sugar. I also added about 2 teaspoons of maraschino cherry juice to try to add some color to the dip. It turned out fantastic! There are only a few comments I would like to add: First, this makes a ton of dip. I made this recipe in a 2.5 quart mixing bowl and it was nearly filled to the top with the dip. Second, the color without the maraschino cherry juice is sort of a cream color. The small amount of juice I added did very little to change the color, although it did impart some extra flavor. Third, the dip does not have a very creamy consistency unless you leave it sit out for awhile before serving (say 30 minutes). I made this the night before the party, and because of the Cool Whip in it, it stiffened up overnight in the fridge. So just keep in mind that if you make the dip ahead of time and refrigerate it, you will probably want to sit it out a bit before you want to serve it. Overall, this was an excellent recipe, and I received several good comments on it from my friends. I will make it again.

Sugar Coated Pecans

This was very easy to make, and the nuts turned out delicious! The first two times I stirred them I was afraid the recipe would turn out bad because they seemed too wet. However, by the time the hour was up, they were nice and crunchy and evenly sugar-coated. And with spraying the cookie sheet with non-stick spray, cleanup was a breeze as well. Will definitely make these again!

Irish Chicken and Dumplings

This was an excellent version of chicken and dumplings (and I have not previously had any success with dumplings). The only suggestion I would make is to cut back on the dumplings, because the amount called for in the recipe completely covers the top of a 4 quart dutch oven and there doesn't seem to be enough room in the pot for all of them. I have made this twice and it is very tasty--even the kids (6 and 4) love it.

Teriyaki Marinade

This marinade was ok. I used it for pork chops and let them marinate for 3 hours. While the marinade smelled good and made a nice coating on the meat when grilled, I didn't feel the meat had soaked up much of the flavor. The chops were about 1/2 inch thick so maybe they should have marinated longer. Anyway, it was easy to put together and my husband liked it alright. Would probably not try this again on pork chops.

Pasta with Scallops, Zucchini, and Tomatoes

This was a simple dish to make and it tasted good. The only recommendations I would make would be to use a thinner pasta (the fettucini just seemed to overwhelm the scallops) and use less red pepper. One change I did make was that I used cut up sea scallops instead of bay scallops. The whole family ate this dish and enjoyed it, including our kids (ages 6 and 4).

Baked Chicken on Rice

After reading previous reviews I made some changes before making this recipe. I used just one 4 oz can of drained mushrooms, 1 can of cream of mushroom soup, 1 can of cream of celery soup, only 2 cups of milk, and 1 envelope of onion soup mix (most poured in the mixture and just a bit sprinkled on top). The cream of celery added a nice twist to the dish. The baking time was pretty accurate. The chicken turned out very moist and the rice was good too--not too firm and yet not too mushy. My kids (ages 6 and 4) ate this dish and liked it, and my husband and I both had seconds. Will probably make this again as revised.

Broiled Scallops

This was an easy recipe to put together and to cook, and it really complemented the flavor of the scallops. I used sea scallops instead of bay scallops. The only difference I found was that mine didn't cook in the 6-8 minute range (it was closer to 10-12 minutes). My husband and I both loved this recipe, but we had to bribe the kids (ages 6 and 4) to eat them (and they are usually not picky eaters). Will definitely keep this one even though the kids may not approve!
