The Best Rolled Sugar Cookies

These tasted very good and held up well for a couple of days as we finished them. My only complaint is that they baked up pretty puffy, so my cut-out shapes were tough to distinguish. Still a very good recipe, though, and I'll use it again. (Also, I took other reviewers' suggestions and added an additional cup of sugar and teaspoon of vanilla--it worked out well.)

Jewish Apple Cake II

This is so easy and delicious! I halved the recipe and baked it in an 8x8 pan for 45 minutes. I also eliminated fat by subbing homemade applesauce for the oil and egg whites for the eggs. This is my new go-to recipe for apple season!

White Chip Chocolate Cookies

These exceeded my expectations! I followed the recipe, except that I used 1/2 cup brown sugar and 1 cup white sugar in place of the 2 full cups of white sugar. The cookies came out crisp, yet chewy and very delicious.

Frosted Pumpkin Bars

I made these as instructed, except that I used whole eggs in place of the egg whites. They were good, but not anything to write home about. The frosting was sweeter than I would have preferred.

Hamburger Potato Casserole

It was pretty much what you'd expect. I followed the recipe, except that I subbed Quorn crumbles for the beef. It tasted simple but good on a cold night. I would not serve it to other people, though, and I doubt that I'd make it again.

Cheddar Bay Biscuits

These were very good. I have never had RL biscuits, so I have nothing to compare them to. I did add 1 teaspoon of minced garlic and a few shakes of Old Bay to the dough. The biscuits were very easy and well-received.

Easy Mini Quiches

These were so simple and quite good. I did substitute finely chopped broccoli for the bacon and mozzarella for the cheddar. I would definitely make them again, though they might be better termed "breakfast puffs," than "quiches."

Lentil Soup

I made this soup as written, except that I omitted the spinach and added four diced potatoes. Also, you should know that the type of vinegar you use is crucial. USE BALSAMIC. It makes the soup phenomenal. I know it sounds silly to think that two tablespoons of vinegar could make or break an entire pot of soup, but its true. Taste the soup right before you add the balsamic and you'll see what I mean. It takes the soup from standard to extraordinary.

Peanut Noodles

With some tweakng, this is one of my favorite recipes. I double the peanut butter and red pepper flakes, and usually add more water to thin the sauce. Also, I usually saute a bag of frozen vegetables--one with broccoli, peppers, water chesnuts, and sugarsnap peas, and toss that in at the end. It is delicious, and even better for lunch the next day.

Quick and Easy Brownies

These were good and super easy. I added some chocolate chips to ensure that they were chocolatey enough, and they did have to bake for about ten minutes longer than the recipe states. But I'll make them again the next time I need a chocolate fix.

Homemade Crispy Seasoned French Fries

These were good, though mine were not very crispy. I am a fairly inexperienced fryer, though, so that may be the problem. I reheated the leftover ones with some shredded cheddar the next day, then I promptly inhaled them. ;)

Baked Tortilla Chips

I didn't have a mister, so I put the oil mixture on a plate and sort of bathed the tortillas before quartering them with scissors and laying them on the baking sheet. I think they were better(though fattier) this way, because the ones toward the end of the batch were not nearly as good as the ones from the beginning, because they got much less oil on them. Also, the spice mix was very good, but next time, I may try plain salt on them. Thanks for the recipe--I have a freezer full of corn tortillas that are going to get "the treatment!"
