Slow Cooker Creamy Potato Soup
We wanted to prep the night before, so to the crock pot bowl, we added diced russet potatoes, a sliced bunch of leeks, and broth to cover completely (along with the evaporated milk that was mistakelny added). Refrigerated it covered overnight (read that this was ok to do) and next morning set it in the base and cooked it for 9 hours on low (added 1 hour to compensate for the refrigeration) We came home from work and it was inedible. The potatoes were firm and did not soften even after simmering on the stovetop for quite some time?! wierd!! I'm giving it afour so as to not taint its results bc i am sure it was something that i did since others did not have this problem.
