Rosemary Red Potatoes

These are so good. I used the leftovers in a beef pot pie that I made and it turned out wonderful the addition of these potatoes.

Never Fail Applesauce Spice Cake

I loved the taste of this cake. It had just the right amount of spice and the frosting was out of this world! The only negative was that my cake did not rise, it got to be only the height of a bar-type cake. Did anyone else have this problem?

Sesame Pasta Chicken Salad

I made this for Labor Day and had quite a bit left, so I placed it in a freezer-proof container and took it out today. I warmed it up in the microwave and mmmm, mmmm good! In my opinion, it tasted better warm than it did cold. This freezes beautifully.

Beef Barley Stew

This was so delish. Like others, I browned my meat and vegetables on the stove, and then added everything else to the crockpot. I ommitted the mushrooms, but compensated with more celery and carrots. Also, I used 1/2 cup of barley and added 1 extra cup of water. It turned out perfect. I will make this again and again.

Roasted Asparagus and Yellow Pepper Salad

This was off-the-hook delicious! We grilled the asparagus instead of broil it, and wow, it was so good. After initially eating this, we saved the rest of it in the fridge for about a week. When we took it out, it was just as good, if not better as the first time around. Thanks for a tasty and different recipe, Kim!

Homemade Black Bean Veggie Burgers

I made this recipe last night and doubled it, and used three eggs. I used red peppers instead of green, and they turned out very tasty! I would cut the cumin down to 1 tbs. next time, though. It seemed to overpower all of the other flavors going on. I think I will also add some corn whe I make these again. Overall, a nice, healthy recipe.

Tuscan Cream Cheese Spread

I made this this past weekend when we had guests over for dinner. They absolutely loved it and asked for the recipe. I omitted the onions and chives (because I didn't have any on hand) but it still turned out delicious! A great recipe!

Cake Balls

These were wonderful and are a great use for leftover cake! I had about 1/2 of a homemade frosted cake that was leftover in the freezer, so all I did was place the cake in a bowl, mix it up, roll into balls, freeze, and then dip into chocolate bar that I had melted. Absolutely divine!

Delicious Ham and Potato Soup

I made this soup last night and used Chicken Broth instead of water and bouillon. I sauteed onion, celery, and carrots in a bit of olive oil first, then added the ham and potatoes to the broth mixture with the veggies. The butter/flour mixture gave it a lusterous, rich base...yummy! I will make this again for sure.

Oven Baked Jambalaya

I used four cans of chicken broth for this recipe, and it turned out perfect. I think next time I might cut the rice down to 3 cups, so the texture will be a bit more soupy. Instead of andouille sausage, I used someleftover grilled brats that I had stored in the freezer. What a wonderful taste! The seasonings were perfect. I will be making this for an upcoming dinner party that I will be hosting.

Chicken Wing Dip
