Baked Coconut Shrimp

I followed the recipe exactly, except I used 1 whole egg instead of the egg whites. I would not do that again because the color of the shrimp looked upappetizing. The coconut never really got too "crunchy". I have two questions, 1) what count of shrimp is to be used exactly? 2) has anyone tried broiling the shrimp instead of baking? I think I will try this next time. Ingredients as listed were right on.

Mexican Chicken Corn Chowder

I have made this chowder several times and my kids especially, love it. What I do to thicken it up, is add in some corn and flour tortillas. I usually cut up 4-5 smaller corn tortillas in strips and maybe 3-4 flour tortillas, depending upon if you get the big or small ones. I add in the corn tortillas about 15 minutes before the soup is done, and the flour tortillas about 5 minutes before it is done. A chef that I knew from Mexico told me about this trick, and it works fantastic for both adding flavor and a creamy consistency to your soup.

Grilled Beef Steaks with Espresso-Bourbon Sauce

We did not like this. It was way too strong with coffee flavor, and ended up being very similar to an overly-thick terriyaki sauce.

Blonde Brownies I

These are extreme goodness! I doubled the recipe and baked in a 9" x 13" pan, and I also greased the pan. They came out of the pan melt-in-your-mouth delicious!

Louisiana Shrimp Creole II

Superlicious! I did not have green pepper, so I substituted red, and I also did not have a can of tomato sauce on hand, so used 8 oz. of Shriimp Cocktail Sauce instead. I think the cocktail sauce added a depth of flavor. This is my husband's new favorite shrimp dish!

Rosemary Red Potatoes

Never Fail Applesauce Spice Cake

I loved the taste of this cake. It had just the right amount of spice and the frosting was out of this world! The only negative was that my cake did not rise, it got to be only the height of a bar-type cake. Did anyone else have this problem?

Sesame Pasta Chicken Salad

I made this for Labor Day and had quite a bit left, so I placed it in a freezer-proof container and took it out today. I warmed it up in the microwave and mmmm, mmmm good! In my opinion, it tasted better warm than it did cold. This freezes beautifully.

Beef Barley Stew

This was so delish. Like others, I browned my meat and vegetables on the stove, and then added everything else to the crockpot. I ommitted the mushrooms, but compensated with more celery and carrots. Also, I used 1/2 cup of barley and added 1 extra cup of water. It turned out perfect. I will make this again and again.

Roasted Asparagus and Yellow Pepper Salad

This was off-the-hook delicious! We grilled the asparagus instead of broil it, and wow, it was so good. After initially eating this, we saved the rest of it in the fridge for about a week. When we took it out, it was just as good, if not better as the first time around. Thanks for a tasty and different recipe, Kim!

Homemade Black Bean Veggie Burgers

I made this recipe last night and doubled it, and used three eggs. I used red peppers instead of green, and they turned out very tasty! I would cut the cumin down to 1 tbs. next time, though. It seemed to overpower all of the other flavors going on. I think I will also add some corn whe I make these again. Overall, a nice, healthy recipe.

Tuscan Cream Cheese Spread

I made this this past weekend when we had guests over for dinner. They absolutely loved it and asked for the recipe. I omitted the onions and chives (because I didn't have any on hand) but it still turned out delicious! A great recipe!

Chili I

This chili is so awesome...it has lots and lots of depth of flavor. It is not bland and tomatoey, if that is what you are looking for. My favorite and only chili recipe!

Cake Balls

These were wonderful and are a great use for leftover cake! I had about 1/2 of a homemade frosted cake that was leftover in the freezer, so all I did was place the cake in a bowl, mix it up, roll into balls, freeze, and then dip into chocolate bar that I had melted. Absolutely divine!
