Easy Turkey Gravy

IF made with real turkey drippings, then what a FANTASTIC and easy gravy recipe! Please note: one cannot expect the same result with all broth/stock, especially if canned/boxed and no turkey fat. Just b/c it utilizes a little canned soup (easssssy, gravy snobs, easy) doesn't mean it's not phenomenally savory, creamy, and the perfect consistency. Only changes I made were to omit garlic, only use a sprinkle of poultry seasoning, and cut salt back by half. I'd never have guessed about the soup being one of the ingredients. I will never make another turkey gravy recipe again. Ridiculously easy to make! Thank you, thank you, thank you!

German Potato Pancakes

Best potato pancake recipe I've found yet! I followed the recipe almost exactly with only 2 changes: doubled flour to 4 TBSP and doubled salt. The mixture was very watery so I did keep squeezing out the excess moisture. The result was well-seasoned, crispy potato pancakes worthy of a German restaurant. Thank you!

Oatmeal Pancakes II

Made exactly as written ingredient-wise, but ground only the oats in the food processor and then whisked together everything else in a bowl- nice light, fluffy pancakes w/ a buckwheaty flavor/texture. Not quite sweet enough, so would probably add a tad more sugar or maybe honey to the recipe next time. Thanks!

Minestrone Soup I

Great recipe! Some changes for preference/items on hand: I didn't have an onion so I added extra carrots/celery (ground up in food processor) and added some frozen cubes of bacon (lardon) while sauteeing. I doubled the tomatoes (used coarse ground instead of stewed) and didn't add cabbage b/c I didn't have any (boo!). Since I had doubled the tomatoes, I added about a cup of water w/ a bouillon cube and doubled the pasta too. In effect, this doubled the recipe. The bacon added a fabulous smokiness and the bits of potatoes, pasta and veggies were perfect- not too chunky. Can't wait to eat again tomorrow!

White Chili II

Made as written? A watery, chock-full-of-onions, overly spicy dish. Made again with the following modifications? FIVE STARS! : 1 large onion instead of 2, cut down cayenne to 1/2 tsp, puree 2 of the cans of beans for a creamier/thicker texture, decrease broth to 2 cans, add in the cheese while on the stovetop to melt/thicken, and, finally, add about a Tbsp of cider vinegar for a touch of acidity. THAT was the best white chicken chili I've ever made/had!

Easy Chocolate Chip Cookies

What an easy alternative to regular chocolate chip cookies! I had a little trouble with them burning around the edges and then being raw in the middle, but I switched to a different baking pan and then they were fine. Very soft texture. Thanks!

German Potato Casserole

Very well-received at a recent Oktoberfest girl's night. Only changes I made were to steam the potatoes with skin on (as opposed to boiling and peeling) and then just cut into rough chunks. Very savory and tasted even better the next day as leftovers

Kingman's Vegan Zucchini Bread

Wow. I'd never have guessed this was a vegan recipe. I was making for a friend's daughter who has egg/milk allergies. I made the batter into muffins instead of a loaf, and they were fluffy, not too dense and had the perfect amount of cinnamon flavor. I made exactly as written except I omitted the flax and arrowroot and I made into about 24 regular sized muffins (which I cooked at 350 for 20 minutes). Thanks!

Zucchini-Chocolate Chip Muffins

Great muffins; very moist and tender. Tripled the recipe, which made exactly 35 muffins. Subbed 1/2 unsweetened applesauce and 1/2 oil. Used 1/2 cup whole wheat flour to every 1 cup of AP flour, and could have probably used more without them being too dense. Omitted nuts. Doubled chocolate chips, but will use less next time. Oh, and had no fresh lemon juice, so used the jarred stuff. Thanks for a fabulous recipe!

Whole Wheat, Oatmeal, and Banana Pancakes

My kids LOVE these! Omitted the milk powder and added 1/2 tsp cinnamon. Added a splash of milk to the batter to thin it out a bit. We divide into freezer portions for busy weekday mornings before preschool, etc. They thaw/heat easily and extremely quickly in the microwave on 50% power

Almond Bars

I have mixed-feelings about these "bars". They were easy to make and had a nice subtle, buttery, almond flavor, but they were quite sponge-like and fluffy in texture as opposed to a chewy "bar" like I was hoping for. It was really an almond "cake". I won't be making again, which is probably a good thing for my waistline as it calls for a very large amount of butter/sugar/eggs. Thanks anyhow!

Cream of Mushroom Soup I

Delicious! Has a nice earthy, subtle flavor. Made the following adjustments: used baby portabellas, omitted the thyme, added fresh garlic and sauteed the garlic and onions in a little EVOO before adding broth, and then pureed only 1/2 the mixture to keep it chunky. Thanks for a great recipe!

Lasagna Alfredo Roll Ups

I was not wowed by these. I followed the directions to a T, except for adding fresh garlic and chopped sundried tomatoes to the spinach filling after reading some reviews about how it was bland, and still found the whole dish somehow salty AND bland at the same time. The filling was good after my changes, but the finished dish once I poured the sauce on was not what I was expecting for such a well-reviewed recipe. I used Newman's Own All Natural Alfredo Sauce, so perhaps it was the brand? Either way, the only way I'd make this again would be if I used marinara instead of alfredo. Thanks anyhow!

Chocolate Chip Banana Muffins

Delicious muffins! I made them with my 3 yr old and they were easy and quick to make. I used milk instead of yogurt and subbed unsweetened applesauce in place of half of the oil. Next time I'd probably use fewer chocolate chips as well, but overall a recipe I'll definitely use again. Thank you!

Creamy Smashed Potatoes

What an easy and tasty recipe! I made it exactly as written the first time, which garnered the 4 star review. The second time, however, I boiled some peeled fresh garlic right in the pot along w/ my potatoes and them mashed them all together. Oh, and I used redskin potatoes and didn't bother to peel them. SO EASY! These changes made it five star!

Sopapilla Cheesecake Dessert

FANTASTIC recipe! Very well-received at a recent dinner party I hosted. Also, extremely easy to make. I didn't even bother rolling out the crescent dough on the counter with a rolling pin; instead, I just unrolled it straight into the pan and pinched the edges together. Per another reviewer, I omitted the almonds and only used 1 cup of sugar for the first step instead of 1.5 cups. I doubled the cinnamon to 2 tsp. and drizzled honey on it as soon as it came out of the oven. Will be adding this to our list of faves!

Mint Chocolate Chip Cookies

Very minty, so if you're not a mint fan than I'd steer clear. I, however, LOVE the combo of chocolate and mint, and found these chewy cookies to be the perfect cure for my sweet tooth! They'd be great for St. Patty's Day too.

Quick Cherry Turnovers

I gave 5 stars for the ease of preparation and simplicity of ingredients. These make a tasty and very easy dessert for a weeknight. I even had my preschooler help me make them. Oh, and I added a couple of drops of almond extract to the cherry filling. Thanks!
