Peanut Butter Pie I

This was a favorite recipe until we started trying to eat healthier, but I did a remake. I replaced the sugar with 1/2 cup of agave and 1/4 raw sugar. I used natural organic peanut butter and skipped the butter (never did use that, don't know what the point of it was) , and I used Luckywhip and mixed it with almond milk. It didn't get very stiff, but that didn't matter with this recipe. I still used the Oreo cookie pre-made crust. I really didn't notice the changes in eating it. It was still delicious!

Elaine's Sweet and Tangy Loose Beef BBQ

Only problem was I scaled down the recipe and it disappeared too fast. Really great alone in a sandwich or with pickles, tomato, and/or lettuce as well. Used the sauce to make sloppy joes as well- was very good that way!

Nana's Apple Crisp

Very much like the way I make my apple crisp. Only I don't melt the butter but mix in 1 stick (1/2 cup) into the the flour mixture. It has a better texture if the butter isn't melted. And I use brown sugar- not white. The only thing I put on the apples before the flour mixture is cinnamon red hot candies. (Less fat, and the extra butter is not needed.) The candies gives the apples a nice pink color and wonderful flavor. There's no need for other cinnamon. I bake for about a half hour.

E-Z Chicken Tortilla Bake

Everyone liked this in my family. I used ground beef because that's what I had. I browned it with onions. I added chili beans (again, what I had) and baked in a 9x13 pan. I put sour cream on the table, some used, some did not.

American Potato Salad

Good basic recipe, easy to adjust for individual tastes. My changes are this: I would cut the mayo about in half and then stir in milk until it's to the consistency I like. It's much easier to coat the potatoes that way and is much lighter. I like to add dill weed, some mustard (either dry or prepared), and paprika. (sprinkling paprika on top gives it a nice look too) I've never tried pepper in mine though. Sliced radishes are good if you like them. I don't care for eggs but my hubby does, so I just lay them on top whole and let him stir them in when he eats.

Oven Roasted Potatoes

I've never had leftovers when I make this, even my son who doesn't care a whole lot for potatoes eats them up. I followed the suggestion of some and set the oven more around 450. I sliced the potatoes about 1/4 inch or less- less will make them crispier. Mmmmm!

Pumpkin, Sweet Potato, and Leek Soup

None of us liked this. It ended up as dog food. I had the feeling I messed something up, the recipe was rather vague on amounts, but I'm a 'dump' cook- just dump stuff in- so it might of been my combination.

Taco Bake I

My whole family liked this recipe. We ate it in tortilla shells, as a dip with chips, or just plain. It was good with sour cream on it as well. I doubled the beans though. Easy and tasty.

No Bake Peach Pie

I've made this recipe for years, it was my Mom's. My birthday is in Aug. and I have this pie instead of cake. It's my favorite pie recipe. I leave out the butter though and use Splenda to cut down on calories.
