Mom's Sweet Potato Bake
Very yummy, got 5 stars from all of my guests! I followed the suggestions of other reviewers and only used ~1/4 cup of white sugar, and added a little bit extra vanilla. I also only used 2 eggs, since that was all I had on-hand, and it seemed to work fine. I'm not a huge fan of nuts, so I substituted oats for the pecans and it worked out nicely. Definitely a great recipe!

Chocolate Chocolate Chip Nut Muffins
I made them basically as written, just without the nuts (I'm not generally a fan). Very yummy! The only downside is that they're very sticky, so even with paper liners they were hard to get out of the pan.

To Die For Blueberry Muffins
These were quite tasty! I used the splash of vanilla that others recommended, and about 1 cup of frozen blueberries and 1/4 cup of dried blueberries (I happened to have them on-hand). The contrast between the berries was nice. I like average-sized muffins, so it made about 16.
